The Assistant Dim Sum Chef is responsible to assist the Head Dim Sum Chef/ Chinese Sous Chef in supervising the Dim Sum section. The Assistant Dim Sum Chef mission and intent is to take full responsibility for the food quality and presentation which covers Banquet, All-Day Dining, Club Floor and a la carte. He has to ensure a good working environment and employee relations in his section and should further be responsible for the training and professional development of his kitchen colleagues. He has to ensure, that agreed quality, hygiene and other standards are kept or surpassed, at all times, by himself and his subordinates. The Assistant Dim Sum Chef needs to be cost conscious and quality orientated and has to have the ability to pass this on to his subordinates.

The Role of the Assistant Dim Sum Chef

  • The Assistant Dim Sum Chef is responsible for the production and quality control of all Dim Sum food served throughout the hotel
  • He is to ensure a professional running of his kitchen and has to ensure that agreed quality, hygiene and other standards are kept or surpassed at all times
  • He needs to be profitability and cost conscious and needs to be responsible in the daily requisitioning of all food goods
  • Has to be familiar with local requirements and sanitation regulations
  • He provides leadership, training and supervision on all production in his kitchen and oversees the quality as well as timely distribution of the food product served
  • He works closely with the Executive Chinese Chef/ Chinese Sous Chef in planning adequate supply of required items for restaurants and banquets, menu development and other related areas

Preferred Qualifications And Skills 

  • High School Diploma or equivalent.
  • 2 years Degree or Apprenticeship in Chinese Kitchen.
  • Minimum of 5 years in the luxury hotel culinary business.
  • Minimum of 2 years’ experience as a Assistant Dim Sum Chef.
  • Ability to communicate fluently in English, Chinese & Bahasa Malaysia languages.
  • Able to read Chinese characters.
