We are looking for an Assistant Director of F&B to join the pre-opening Team of Mandarin Oriental Palace, Luzern.

The iconic Hotel Palace Luzern first opened in 1906 and is located in the heart of the city, on the shores of Lake Lucerne. The multi-million-dollar renovation will include the restyling of all guestrooms and suites, the redesign of the public areas, restaurants and bars as well as the landscaping of the outdoor grounds. Following the completion of the renovation, Mandarin Oriental Palace, Luzern will comprise 146 rooms and suites offering excellent views of the lake and mountains. There will be a restaurant and a bar together with a variety of social and meeting facilities and a spa and fitness room.

As an Assistant Director of F&B, you will take full responsibility for all aspects of F&B, in the absence of the F&B Director, and be pro-active, creative and results driven. You will be responsible for assisting the F&B Director in overseeing the overall daily F&B operation, health and safety, recruitment, maintenance of quality standards, training and reviews of all colleagues.

The Assistant Director of F&B will be responsible for the following duties:

  • Supervise the day-to-day operation of the F&B Department.
  • Assist the F&B Director in controlling and analysing on an on-going basis for the following:
    • Guest Satisfaction
    • Merchandising and marketing
    • Revenues and Operating Costs
    • Sanitation, cleanliness and hygiene
    • Conduct weekly inspections of kitchens and restaurants with minuted follow-ups.
    • Prepare and control wine and beverage lists.
    • Conduct daily hotel tours to observe operational standards and difficulties and follow them up with the relevant Managers.
    • Ensure the monthly parstock adjustment of all operating equipment is updated in all outlets.
    • Assume the responsibilities of F&B Director in his absence.
    • Perform related duties and special projects as assigned by the director of F&B.
    • Plan in conjunction to the F&B Director and outlets Managers activities, promotions, menu implementations according to the annual marketing plan.
  • Ensure that all designated action points daily briefings or bi-monthly operational meetings are being followed by the individuals concerned.
  • Handle, under the guidance of the F&B Director, responsibilities such as hiring specific levels of employees, employee orientation, job performance appraisal, coaching to ensure appropriate staffing and productivity.
  • Ensure training is carried out for all F&B personnel in order to maintain /upgrade our legendary service standards.
  • To carry out labour forecasting.
  • Assist in the hotel’s strategy plan, annual marketing plan, goal program and budgeting for the F&B Department.
  • Update daily, weekly and monthly F&B report
  • Ensure that daily SOP Training takes place in order to meet Mandarin Oriental standards

  • Handle customers comments and complaints and take swift corrective action after consultation with the Director of F&B and department head concerned.
  • Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations.
  • To ensure any accidents to colleagues, guests or visitors are reported in accordance with Hotel procedures.
  • To undertake responsibility for supervising, training and instructing colleagues in terms of H & S.

What you will need to have?

  • Previous hotel luxury experience in a similar role
  • Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding.
  • Must be highly numerate and able to work comprehensively with spreadsheets and budgeting packages
  • Excellent communication skills both written and verbal in German and English;
  • Experience in developing strategic business and/or Food and Beverage plans
  • Experience in Bench-marking activities
  • Experience in Food and Beverage budget preparation, profit and loss statement analysis and forecasting
  • Experience in the administration of Food and Beverage promotions
  • Excellent forward planning and decision making skills
  • Experience in performance Management
  • Experience in dealing with a multi-cultural environment and people oriented
  • Good knowledge of Microsoft Office, including Word, Excel, PowerPoint;
  • Organised with high level of integrity and professionalism, reliable, courteous and with a good presentation;
  • Able to handle multiple tasks simultaneously, be enthusiastic and have initiative.
