  • General:
    • It is part of your role to understand and disseminate/communicate all corporate and hotel policies and standard operating procedures to the colleagues.

      • Ensure the colleagues’ career path and development needs are being prioritized and documented in accordance with the MO Profile online system.
      • Hold monthly meetings with all colleagues to assure they have a forum to voice any concerns or challenges and share departmental and hotel information.
      • You shall take all reasonable steps to safeguard stored information, and not divulge or otherwise transfer any personal data concerning the guests, customers or colleagues, or any confidential information concerning the hotel unless with the appropriate authority.
      • Use of the hotel’s network, computers or internet access which is in the hotel’s view unreasonable or inappropriate, for example gambling, chatroom, or pornographic material, is a serious breach of hotel policy and grounds for summary dismissal.
      • Support and adhere to all policies & procedures relating to Safe, Sound and Sustainable at Mandarin Oriental.
      • Ensure compliance with the MOHG Social Media Policy, i.e. to be fully responsible for the content you publish on any social media platform, including your personal site.

      • Act as a hotel ambassador at all times.
      • To carry out any additional duties requested by management, related to hotel operational activities.
      • Follow the principle of the 5Ps ‘Proper Planning Prevents Poor Performance’ at all times and for all activities.
  • Divisional:
    • Assume the responsibilities of the Director of F&B in his absence.
    • Supervise the day-to-day operations of the F&B Department.
    • Assist the Director of F&B in controlling and analyzing on an on-going basis the following:
    • Guest Satisfaction
    • Revenues and Operating Costs
    • Sanitation, cleanliness and hygiene
      • Conduct weekly inspections of kitchens and restaurants with minuted follow-ups.
      • Control wine and beverage lists.
      • Conduct daily hotel tours to observe operational standards and difficulties and follow them up with the relevant Managers.
      • Ensure the monthly par stock adjustment of all operating equipment is updated in all outlets.
      • Perform related duties and special projects as assigned by the Director of F&B.
      • Plan in conjunction to the Director of F&B and Outlet Managers activities, promotions and menu implementations according to the annual marketing plan.
      • Attend to and contribute to the scheduled Food & Beverage meetings.
      • Maintain a close relationship with key members of the culinary department.
      • Ensure that all designated action points from daily briefings or conversations are being followed by the individuals concerned.
      • Handle, under the guidance of the Director of F&B, responsibilities such as hiring specific levels of colleagues, colleague orientation, job performance appraisal and coaching to ensure appropriate staffing and productivity.
      • Ensure job descriptions and standard manuals pertaining to the F&B department are updated whenever necessary.
      • Attend to colleagues’ grievances and take timely remedial actions.
      • Assist the Director of Food & Beverage in the hotel’s, annual marketing plan, CAPEX plan and budgeting process for the F&B Department.
      • Monitor daily beverage and general store requisitions and oversee the inventories and work closely with the outlet managers and Bar and Beverage manager and Sommelier on those.
      • Ensure that daily SOP Training takes place in order to meet Mandarin Oriental standards.
      • Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement.
      • Do regular self-audits of LQEs and SOPs to ensure standards are met.
      • Understand feedback from quality analysis reports and act on it to ensure standards are being met and operations are constantly improving.
      • Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook.
      • Handle customer’s comments and complaints and take swift corrective action after consultation with the Director of F&B and department head concerned.
      • To monitor the standards and cleanliness of the Back of House areas in conjunction with the Executive Chef and the Chief Steward.
      • Assist the Director of Food and Beverage to oversee the Food Safety program of the F&B division.

    Skills & Qualifications:

      • High School qualification or equivalent.
      • Degree or Higher National Diploma in Hospitality/Hotel/Business Management.
      • Experience as Assistant Director of Food & Beverage in a high-volume F&B Operation with highest levels of service is preferred.
      • A minimum of 8 years of experience working in a 5-star hotel environment, including 5 years in Food & Beverage management roles.
      • International work experience in at least two of the following regions: Asia, Europe, North America and preferably Middle East.
      • Hotel pre-opening or renovation experience is preferred.
      • Creative, innovative and thinks outside the box.
      • Ability to understand guest needs and expectations and to deliver superior customer service through own initiative and through driving and motivating his/her team accordingly.
      • Ability to work long hours with a strong focus on operational excellence.
      • Experience with restaurant point of sales and cashiering procedures.
