We are looking for a Back of House Manager to join our pre-opening team at Mandarin Oriental Costa, Navarino.

Mandarin Oriental, Costa Navarino will be located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.

The beachfront resort will be part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It will comprise 99 guest rooms, including 48 pool villas, all with outdoor terraces and sea views, along with five restaurants and bars.

It is the mission and intent of this position that the incumbent will take full responsibility for all aspects of the hotel’s F&B Back of House and be pro-active, creative and results driven.

The BOH Manager is responsible for the overall hotel stewarding operations and ensuring that their assistant and all the stewards are delivering the necessary level of service. He/She will be responsible for the implantation HACCP and Health & Safety guidelines related to Food & Beverage from MOHG as well as local codes.

The BOH Manager will report directly to the Executive Chef. The positions of Assistant BOH Manager, Steward and BOH Supervisor will report to the BOH Manager.

The Back of House Manager will be responsible for:

  • Ensure that all designated action points from daily briefings or other operational meetings are being followed by the individuals concerned.
  • Take responsibility of all operating equipment within the hotel
  • Inspect S&S files monthly to ensure proper procedures and updates are in place
  • Maintain storage of operating equipment and the cleanliness and tidiness of the stores
  • Maintain the perfect condition of all operating equipment
  • Maintain the purchasing and repair of all equipment
  • Maintain strategy for breakages and losses to the hotel’s operating equipment
  • Implementation of HACCP with certification, follow up training for the F&B team.
  • Oversee special projects and assignments as assigned by the Executive Chef and/or the Director of Food & Beverages
  • Oversee chemical expenditure and control of chemical purchasing
  • Ensure that daily SOP Training takes place in order to meet Mandarin Oriental standards
  • To be aware of, and comply with, safe working practices as laid down in Company H & S Manual, as applicable to your place of work. This will include your awareness of any specific hazards at your workplace.
  • To successfully implement and control effective all related HACCP and Health & Safety guidelines related to Food & Beverage from MOHG as well as local codes.

What are we looking for?

  • Minimum of 3 year’s experience in a similar position, preferable in luxury hotel/restaurant environment
  • Have a minimum of 1-2 year’s experience in Back-of-House
  • Management within a luxury hotel operation
  • Pre-opening hotel experience preferred within Back-of-House Management
  • Technical knowledge and job skills training including effective use of the provided materials
  • Reading, writing and oral proficiency in the English language preferred.
  • Reading, writing and oral proficiency in Greek
  • Excellent Food and Beverage knowledge
  • Microsoft Office Apps (Excell, Word) advanced knowledge.
