  • Supervise and carry out the production of all SOMM dishes according to the prescribed recipe and specifications and ensure that the taste, portion size, quality and presentation of the dishes conform to the Restaurant’s standard
  • Act as a mentor and advisor to his staff, and maintain excellent communication with direct reports through regular update meetings. Ensure you lead by example and are a motivator for the teams.
  • Make conversation & assert guest satisfaction to all guests during the three meal periods in the restaurant and find out their likes and dislike as well as building rapport.
  • Prepare and check mise en place & stock par levels
  • Work closely with Chief Stewarding to maintain the cleanliness of both his team’s equipment and kitchen areas
  • Promote a culture of sustainability, by waste reduction, local sourcing, eliminate single used plastic and other related initiatives.
  • Coordinate with the Pastry and Butchery to produce mise en place in line with business levels.
  • Inspect incoming products and ensure proper storage and rotation, as well as daily inspection of dates & odd items in the refrigerators in compliance with SOP & HACCP regulation.
  • Create in collaboration with Director of Culinary Operations and Food & Beverage Dishes, menus & menu proposals
    Be responsible and accountable for the departmental operating budget & food cost
  • Perform any other reasonable duties as required by the department head from time to time


  • Minimum 10 years practical experience in Michelin- starred restaurants 
  • Asian, NYC or Japanese experience considered as an advantage
  • Insure continuous application of the Safe & Sound program during the daily operation of the kitchen
  • Fully manage own kitchen to meet all quality, hygiene & operating standards, with understanding of HACCP
  • Excellent technical culinary skill required and hands on in the position
  • Motivational & enthusiastic character with excellent listening skills
  • Strong culinary trainer

  • Good command in English
