  • To read all banquet function sheets to ascertain types and quantities of vegetables and stocks
  • To handle safely all equipment used in the Commissary. To ensure the maintenance and cleanliness of all Commissary equipment’s.
  • To prepare the mis en place for each outlet and banquets
  • To deliver and stock all mis en place in the proper location in a timely manner.
  • To handle and report any accident immediately, no matter how minor.
  • To respond properly in any hotel emergency or safety situation.
  • To maintain a good working relationships with colleagues and all other departments
  • To respond in the changes of the departmental function as dictated by the industry, company or hotel.
  • To work in any section of the kitchen when necessary or as requested by the Sous Chef or Executive Chef.
  • Prepare kitchen equipment for use.
  • Maintain a hygienic kitchen and high standards of personal hygiene

Skills Requirements:

  • Experience: Two years of experience in butchery field in hotel industries.
  • Education: Post graduate and / or Hotel Management School / Apprenticeship. Master Degree preferred but not required.
  • General Skills: Must be knowledgeable in basic mother sauces, soups and in commissary kitchen production. Must have full knowledge of sanitation requirements in handling food.
  • Technical Skills: To ensure that kitchen operating equipment’s are maintained in a good standard.
  • Language: Required to have good English when it comes into understanding, Speaking, and Writing.
