Cost Controller

YOUR ROLE

Under the guidance and supervision of the Head of Department and within the limits of established Mandarin Oriental Hotels Group policies and procedures the Cost Controller will ensure that we will continually improve the quality of products used within the hotel and their costs in order to enhance the services and guest satisfaction and will be maintaining integrity, fairness and honesty with internal and external costumers. 

YOUR DUTIES

• ensures effective analysis of food costs by commenting on variances between potential and actual food costs, analyses recipes, yields and portioning of orders and voices recommendations accordingly
• contributes to inventory control by overseeing proper record-keeping of inventories on raw materials purchased
• ensures regular inventory-checking and assisting in the review and improvement on inventory control systems
• ensures overall efficiency of the section by providing supervision and reference to staff whenever required
• compares invoices, requisitions, sales & prepares reports showing cost vs. sales 
• compares menus vs. food cost vs. sales price
• prepares F&B Cost Control reports and analyses variances
• makes recommendations on costs and stocks

YOUR PROFILE

• at least 2 years of experience within the hospitality industry
• very high sense of responsibility
• attention to details
• German and English language is mandatory
