Duties and Responsibilities

  • Provide leadership and support for all Banquet Managers and colleagues.
  • Trains, evaluates and schedules Banquet colleagues in accordance with the standards of the company policies and guidelines.
  • The ability to hire, train, motivate, discipline, direct, and supervise the work of the colleagues in the Banquet Department.
  • Schedule all colleagues to maintain the service standards of Mandarin Oriental while operating within budgeted labor cost guidelines.
  • Ensure proper care, security and maintenance of hotel equipment through proper supervision of service personnel.
  • Maintain daily housekeeping program to include storage and operational areas and colleague appearance.
  • Coordinate and insure the needs of the Catering department with the managers of interrelated departments.
  • Prepare the payroll and gratuity reports as required.
  • Attend and participate in all required meetings on a regular basis.
  • Organize and orchestrate any last minute changes or details to functions.
  • Post all contracted function sheets and gives instructions to Assistants, Banquet Servers to insure the success of the function.
  • Communicate directly with the hosts of functions and go over the details of the function.
  • Directly oversee the actual set-up and service of contracted functions by giving specific menu information to the servers, by coordinating the timing of the events with the Executive Chef / Banquet Chef and by assigning functions to the Assistants and Banquet Servers to insure the success of the function.


  • Reading, writing and oral proficiency in the English language.
  • Willing to work a flexible schedule and holidays.
  • Be a self-motivator and motivator of others
  • Work in a safe, prudent and organized manner.
  • Have an in-depth knowledge of food and preparation
  • Have a in-depth knowledge of wine
  • Be able to relate to all levels of guests and management.
  • Have a minimum of 5 years experience in similar position, preferably in luxury environment
  • Have the ability to handle multiple tasks at one time.
  • Have excellent communication and organization skills
  • Be able to consistently delight and satisfy our guest
  • Have the ability to handle guest requests in a detailed manner
  • Must have excellent attention to details, and extensive service knowledge
  • Excellent leader and trainer.
  • Strong interpersonal skills.
