We are looking for an Executive Chef to join our pre-opening team at Mandarin Oriental, Costa Navarino, set to open in Spring 2023.

Mandarin Oriental, Costa Navarino is located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport. The beachfront resort will be part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It will comprise 99 guest rooms, including 48 pool villas, all with outdoor terraces and sea views, along with five restaurants and bars.

As the Executive Chef, you will take full responsibility for all aspects of the hotel’s kitchen being pro-active, creative and results driven. You will be responsible for the overall culinary output of the hotel including outside catering, retail and other potential revenue generating areas. You will ensure a good working environment and colleague relations throughout the kitchen and should further be responsible for the training and professional development of all kitchen staff. Furthermore you will also ensure, that quality, hygiene and other standards are kept or surpassed, at all times.

The Executive Chef is responsible for the following:

  • Foster positive thinking and motivation within all kitchens by giving active assistance and advice on more effective ways of running kitchens
  • Plan in conjunction with the Executive Sous Chef, Outlet Chefs and Outlet Managers activities, promotions and menu implementations according to the annual marketing plans
  • Be responsible and accountable for the overall food costs as well as kitchen supplies, kitchen energy costs and kitchen utensils
  • Plan co-ordinate and supervise all menu implementations in a timely manner
  • Create and develop new dishes and recipes by keeping up with the latest market trends
  • Constantly strive to improve kitchen operation procedures
  • Be fully responsible for the labour budget of the kitchen department

What are we looking for?

  • Relevant experience in culinary, ideally in luxury environment.
  • Experience of running restaurants and kitchens to budget targets
  • Technical knowledge and job skills training including effective use of the provided materials
  • Reading, writing and oral proficiency in Greek is preferred
  • Menu planning and recipes knowledge
  • Excellent Food and Beverage knowledge
  • Cost control awareness and ability to keep to budgets
  • Good kitchen organization experience
  • Local and international food and beverage awareness
