The Hotel

With 326 guest rooms and 31 suites, Mandarin Oriental, Miami is located in Brickell Key and is a prime location for both business and leisure guests.  It is an urban resort with a Miami’s only private beach and Florida’s only Forbes triple 5-star property.  

Strategic Intent

It is the mission and intent of this position that the incumbent will take full responsibility for all aspects of the culinary department by assisting the Executive Chef, being pro-active, creative and results driven, focusing on delighting our guests and creating a Mandarin Oriental Experience.

To be the leader of a 5-star culinary team.  To be a great culinarian and motivator to make the Mandarin Oriental, Miami one of the best culinary operations in the country. Organizational Structure

The Executive Chef will report directly to the Food and Beverage Director. The functional positions of Executive Chief Steward, Executive Pastry Chef, Sous Chefs, Chef Garde Manger, Banquet Chef, and the Culinary Coordinator will report directly to the Executive Chef.

Duties and Supporting Responsibilities

  • Support company's philosophy and company culture through the use of Pillars of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Support Company's philosophy and company culture through the use of Guiding Principles and D.E.L.I.G.H.T as part of ensuring Guest Satisfaction and the achievement of our Mission Statement.
  • Prepare annual budgets for culinary food cost and culinary labor cost.
  • Closely monitor food and labor costs making the culinary chefs aware of the budget and goals holding each one responsible for their areas and results.
  • Be proactive not reactive to business levels to insure proper quality, and to meet financial goals.
  • Interview and fill each key culinary position with the best available candidate to maintain the top level of excellence.
  • Attend P&L meeting, Department Head meeting and other required meetings.  Pass the necessary information from these meetings to the proper individuals in the culinary department.
  • Head weekly Sous Chefs meeting and monthly general Culinary meeting to relay hotel information and to listen to the department needs.
  • Plan and submit a yearly CAPEX budget for the culinary department.
  • Make sure that all of the culinary areas have the proper tools to so each colleague can do their job properly.
  • Make sure all of the Food and Beverage Safe and Sound program is followed and the proper documentation is completed for the yearly audit.
  • Must keep up to date with the latest food styles and trends.
  • Participate in local and national media and PR culinary events. Be an ambassador for the restaurants and the hotel.
  • Must be available to all culinary colleagues keeping an open-door policy.
  • Works as a team with colleagues in the culinary department and supporting departments such as the restaurant servers, banquet and catering and stewarding.
  • Train and develop chefs and colleagues and encourage growth within the hotel and company.
  • Be a major support to all the food and beverage managers and support the policies of the company.
  • Must be able to work under pressure and handle stress.
