  • Oversee overall day-to-day operation, planning and long-term outlook of the Stewarding Department. 

Essential Functions

  • Support company's philosophy and company culture through the use of Pillars of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Provide support for the assistant and supervisor in any problem or situation.
  • Attend the B.E.O. meeting.
  • Attend the weekly department head meeting.
  • Set goals and mission for the stewarding department.
  • Develop yearly budget.
  • Develop monthly stewarding forecast.
  • Monitor stewarding payroll.
  • Review and approve stewarding P.A.Fs.
  • Inventory of china, glasses, silverware and hollowware from the outlets and main storage.
  • Provide enough equipment (china, glasses, silver) to the outlets and banquets for they operations.
  • Inventory and control of the chemicals supplies.
  • Develop a cleaning schedule for the kitchen, pastry, garden manger, banquets, cafeteria, and coolers.
  • Do weekly schedule for employees.
  • Do requisition for banquets from the B.E.Os.
  • Control all the expenses. Paper supply, Fuel supply, uniform, cleaning supply; etc…
  • Develop a cleaning schedule for the dumpster area.
  • Develop a maintenance schedule for the dishwasher machines.
  • Develop a cleaning schedule for Banquets equipment.
  • Assist and provide equipment for any banquets function.
  • Assist and help banquet kitchen to plate up.
  • Establish a Hygiene and Control program for the kitchen and surround areas.
  • Coaching the assistant, supervisor, lead steward and employees.
  • Develop a training program for stewards.
  • Revise standard and procedures for department, as necessary.

Education and Experience

  • A minimum of 2 years of experience in a Department Head food & beverage or stewarding position.
  • Excellent communication skills with fluency in English required.
  • Must be willing to work a flexible schedule that will include early mornings, late nights, weekends and holidays in order to accomplish all major responsibilities and tasks.
  • Demonstrated superior organizational skills; superior multi-tasking abilities required.
  • Must be proficient in Microsoft Office, Word, PowerPoint, Excel.
  • Prior experience in a luxury hotel is preferred.
  • Prior experience in a large banqueting operation is preferred.
  • Bi-lingual abilities are preferred.
  • Prior experience working in a unionized hotel setting is strongly preferred.
