Duties and Supporting Responsibilities

Administration

  • Assist the day-to-day operation of the F&B Department.
  • Assist the F&B Manager in controlling and analysing on an on-going basis for the following:
    • Guest Satisfaction
    • Merchandising and marketing
    • Revenues and Operating Costs
    • Sanitation, cleanliness and hygiene
  • Perform related duties and special projects as assigned by the F&B Manager
  • Attend to and contribute to the daily and weekly F&B meetings.
  • Ensure that all designated action points daily briefings or bi-monthly operational meetings are being followed by the individuals concerned. 
  • Assist in the hotel’s strategy plan, annual marketing plan, goal program and budgeting for the F&B Department.
  • Update daily, weekly and monthly F&B report
  • Ensure that daily SOP Training takes place in order to meet Mandarin Oriental standards
  • Understand feedback from quality analysis reports and act on it to ensure standards are being met and operations are constantly improving 
  • To monitor the standards and cleanliness of the Back of House areas in conjunction with the F&B Manager.
  • Maintain hotel grooming, uniform and hygiene standards, enhancing a professional image
  • Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations.
  • To be aware of, and comply with, safe working practises as laid down under FHLSS. This will include your awareness of any specific hazards at your work place
  • To attend any training deemed appropriate by your Head of Department.

 

Requirements

  • Available for a minimum 6 months internship
  • Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding.
  • Previous experience in operative F&B roles
  • Excellent command of both written and spoken English
  • Excellent command of both written and spoken local language
  • Good analytical skills
  • Ability to handle pressure in a fast paced environment
  • Must be able to work independently                           
  • Good organizational skills
  • Good interpersonal skills
  • Good communication skills whether verbal, written or non verbal
  • Flexible and with high energy level
  • Possess high standards and professionalism
