We are looking for a Head Sommelier to join our pre-opening team at Mandarin Oriental, Costa Navarino, set to open in Summer 2023.

Mandarin Oriental, Costa Navarino will be located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.

The beachfront resort will be part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It will comprise 99 guest rooms, including 48 pool villas, all with outdoor terraces and sea views, along with five restaurants and bars.

Mandarin Oriental, Costa Navarino will position itself as an exclusive resort hideaway in Greece, providing the best of barefoot luxury art of living.

The Bartender will be responsible to drive the development of an innovative and unique wine program.  The smooth running and leadership of the service of the designated outlets with service excellence to deliver business objectives and financial success.

The Head Sommelier will be responsible for the following:

  • Assist the outlet management to lead and direct the outlet’s service team daily to ensure the operation of the department delivers consistent excellence and guest satisfaction.
  • To drive kind and generous service in always treating both guests and colleagues in a respectful manner while and treasuring our colleagues as much as our delightful guests.
  • To ensure active and regular communication with the team through daily line ups and assist the outlet management to hold regular 1:1 meeting with line colleagues.
  • To ensure that the wine list and wines by the glass suggestions are consistently updated.
  • To display excellent food and wine knowledge, being able to recommend and match appropriate wines with the chosen food to all guests.
  • Regular wine trainings for FOH and Bar personal.
  • To ensure that all beverages are correctly charged.
  • To ensure appropriate processes and systems are in place to deliver both revenue and profit margins as per budget projections.
  • To handle all duties relating to ordering, requisitions and return of unusable beverages, maintaining sufficient stock levels and MEP.
  • To be cognizant of quality and cost control through close liaison with the Purchasing and Logistics Director.
  • Partner with the (A)DoFB and Finance Director to ensure costs are properly managed and departmental margins achieved.
  • To ensure that all beverages are stored securely.
  • To ensure that the cellar is always kept stocked, clean and in the appropriate operational order.
  • To organize the cellar and all related paperwork in an efficient manner to ensure successful monthly stock takes. 
  • Daily liaison and partnership with the kitchen team to share information, best practice and ensure a harmonious relationship between culinary and service teams, resolving any concerns after and not during service.
  • To attend all internal and hotel meetings required according to meetings schedule.
  • Partner with the HR & L&D to ensure all MOHG programs are actively supported and attended by the team.
  • To ensure service and Back of House areas are always kept clean and work is conducted according to the MOHG standards of FLHSS.
  • To report and follow up all maintenance defaults to ensure efficient and professional delivery of service.
  • To assist management with completion of office admin work.
  • To perform any other reasonable duties as required by Management.

  • Very good communication skills are essential.
  • Must have excellent attention to detail, and a solid food and beverage knowledge.
  • Excellent forward planning and decision-making skills.
  • Experience in performance management.
  • Local and international food and beverage awareness.
  • Excellent command of both written and spoken English.
  • Reading, writing and oral proficiency in Greek is preferred.
