The mission and intent of the incumbent is to ensure the service and culinary standards are in compliance with all MOHG service and HACCP standards. The In-Room Dining Manager maintains an efficient operation of the department and meets guests' expectations for quality of the product and service. He/She will make sure that all standards and procedures of the department are being followed and are consistent. The In-Room Dining Manager will be overseeing the overall day to day operation, planning, and long term outlook of In Room Dining. The Manager of In-Room Dining is responsible for supervising the In-Room Dining servers and order takers.

Essential Functions

  • Complete detailed checks of the entire In Room Dining operation during all service periods taking necessary actions to correct any deviation from quality standards
  • Ensure that all designated action points from daily briefings or bi-monthly operational meetings are being followed by the individuals concerned
  • Ensure that positive working relations with non Food and Beverage departments are fostered giving cooperation at all times
  • Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations
  • Cooperate with and drive forward the implementations of Mandarin Oriental Legendary Service Training in the In Room Dining team with direct follow up with Director of Food & Beverage.
  • Ensure disciplinary procedures are properly adhered to and followed
  • Participate in weekly inspections of kitchens and outlets with minuted follow-ups
  • Carry out projects and assignments as requested by the Executive Director of Food & Beverage, i.e. wine lists, beverage lists, etc.
  • Handle customer comments and complaints and take swift corrective action after consultation with the Director of Food & Beverage and department head concerned
  • Prepare and control wine and beverage lists
  • Conduct daily inspections to observe operational standards and difficulties and follow up with Director of Food & Beverage
  • Be responsible for and accountable for the departmental operating budget
  • Find ways to improve the efficiency of the operations; of maximizing and increasing sales and/or yield; of reducing costs without affecting the level of service or product
  • Propose and initiate when approved, new services and products for our guests
  • Perform any other reasonable duties as required by the department head from time to time

Education and Experience

  • Degree in Hotel Management or Business Administration preferred
  • Minimum 5 years of Food and Beverage experience
  • Excellent forward planning and decision making skills
  • Experience in dealing with a multi-cultural environment and people oriented
  • Strong background on Food and Beverage technical knowledge
  • Excellent leadership skills
  • Excellent organisational skills
  • Good analytical skills
  • Ability to handle pressure in a fast-paced environment
  • Excellent interpersonal skills
  • Excellent communication skills whether verbal, written or non-verbal
