Scope of Position

  • The Executive Chef is responsible to supervise all culinary operations and control all aspects of the kitchen operation
  • To create the finest dining experiences throughout the hotel in line with the F&B concepts by applying latest food trends and analysing customer feedback.
  • Set clear direction for the culinary operation, communicating required actions and relative information with the Senior Chefs.
  • To lead the culinary team to produce consistently high quality food production and presentations in all outlets and facilities of the hotel setting agreed standards.
  • He is responsible for the overall food cost of the culinary division, as well as all culinary related expenses.
  • He is responsible to control the culinary manning and related expenses.
  • To participate in financial budgets together with the F&B Director.
  • He is to culture a positive & professional working environment throughout the kitchens and influence culinary members through demonstrating disciplined leadership, sharing technical skills and culinary knowledge, and upholding all culinary & hotel standards.
  • Train and develop all kitchen staff in a professional and enthusiastic environment, promoting career growth & opportunity.
  • Ensure that all department trainers plan and implement continuous effective training for culinary employees and uphold hotel standards.
  • Ensure that the HACCP food hygiene program surpasses all required standards.
  • Ensure safety standards are upheld or surpassed, at all times.
  • Be a role model of all rules, regulations, policies and procedures of the hotel.

Requirements

Educational level                              

  • Globally-recognized culinary qualification
  • Degree holder in Hotel and Catering Management an advantage

Work experience                                 

  • Minimum of 10 years cooking experience in restaurant and/or luxury brand hotel kitchen (or relevant work experience)

Job knowledge                                     

  • Technical knowledge and job skills training including effective use of the provided materials
  • Reading, writing and oral proficiency in the English language is desirable
  • Reading, writing and oral proficiency in the local language
  • Menu planning and recipes knowledge
  • Excellent Food and Beverage knowledge
  • Cost control awareness and ability to keep to budgets
  • Good kitchen organisation experience
  • Local and international food and beverage awareness

  • Experience in the same capacity for at least 4 years, 2 of which are international experience
