The Resort Manager reports into the General Manager and oversees the F&B functions including the Executive Chef and the Director of F&B, Director of Spa, Wellness & Recreation, Director of Housekeeping, Director of Guest Experience (Front of House Manager) as well as the Director of Engineering. 

The Resort Manager will be responsible for:

  • The overall operation of the Resort including Food & Beverage, Rooms, Spa, Engineering and Security.
  • The implementation of all operational standards and their upkeep.
  • The elaboration – together with the L&D Manager – of appropriate training plans in all operational areas and their update, based on the hotel KPIs, guests’ comments and service audits results.
  • Handle all guests’ complaints; ensure timely rectifications of service standards when needed.
  • Formulation and implementation of strategy related to the hotel. The Hotel Manager will propose strategies and solutions to operational issues improving guest services and colleague productivity.
  • Will execute all operational and strategic initiatives that have been discussed, providing feedback and alternatives.
  • Preparation of strategic business plans for the hotel specifically pertaining to Operations.
  • Development of lower and middle management executives through coaching, mentoring and general communications. To use the Balanced Score Card and other appraisal formats as tools for goals and target settings and to engage in feedback.
  • It is part of your role to understand and disseminate/communicate all corporate and hotel policies and standard operating procedures to the colleagues.

  • It is part of your role and your responsibility to fully support all learning and development activities.

    • Update and maintain a complete Training Matrix for all divisions and all departments.
    • Update and maintain Job Description and Job Specification Matrix for all divisions and all departments.
  • Ensure the colleagues’ career path and development needs are being prioritised and documented in accordance with the MO Profile online system.
  • Hold monthly meetings with all colleagues to assure they have a forum to voice any concerns or challenges and share departmental and hotel information.
  • To support and adhere to all policies & procedures relating to Safe, Sound and Sustainable at Mandarin Oriental.
  • To ensure compliance with the MOHG Social Media Policy, i.e. to be fully responsible for the content you publish on any social media platform, including your personal site.
  • To provide input for the creation and implementation of promotional activities with all Divisions.

What are we looking for?


  • F&B and resort experience is preferable.
  • Experience in leading a team at EXCO level. Can be for example a seasoned F&B Director ready for the next step.
  • Excellent command of both written and spoken English. Greek language skills preferred, not a must.
  • Must be highly numerate and able to work comprehensively with spreadsheets and budgeting packages.
  • Experience in developing strategic business and strategic implementation.
  • Excellent forward planning and decision making skills
  • Experience in dealing with a multi-cultural environment and people oriented
  • Experience in developing teams and individuals
  • Experience in quality driven projects
  • Ability to handle pressure in a fast paced environment
  • Excellent interpersonal skills.
