To drive food and beverage operations for the restaurant ensuring successful leadership and encouragement for the team  in order to meet and exceed guest expectations.

  • To ensure that all Legendary Quality standards are implemented and maintained throughout the restaurant and lounge
  • To monitor service delivery by following action plans for LQS  in order to meet and exceed guest expectations.
  • To drive the total training concept and employee development implementation in order to promote a climate of enthusiasm and encouragement
  • To ensure effective inter-departmental communication so as to achieve efficient teamwork and accurate information for our guests
  • To liaise with the Restaurants Manager to monitor sales strategies and maximisation of revenue whilst ensuring guest satisfaction
  • To monitor the beverage stock ensuring sales accuracy and delivery of beverages for our guests at all times
  • To monitor labour costs and departmental expenses by effective planning

 

 Standard Tasks

  • To ensure that Mandarin Oriental grooming guidelines and appearance standards are adhered to, demonstrating a professional image for guests
  • To attend meetings according to schedules, ensuring information is communicated effectively  
  • To conduct briefings ensuring appropriate updates of information and working organisation guidelines
  • To prepare rosters ensuring efficient delivery of service to our guests according to business requirements
  • To monitor table plans according to reservation requirements
  • To ensure the smooth flow of service is professionally maintained throughout the guest meal experience
  • To respond proactively to guest feedback to reach full satisfaction
  • To communicate and follow up guest correspondence
  • To ensure that revenue is maximised through extensive up-selling by guiding  guests with their choices
  • To ensure that the physical features and appearance of the restaurant are maintained according to required standards
  • To conduct and assist employees with counselling and disciplinary procedures in line with Mandarin Oriental Procedures and spanish legislation
  • To carry out annual appraisals on all team members
  • To conduct departmental orientation for all new team members
  • To liase with the Training Manager on departmental training needs
