Major Responsibilities

 

  • To maintain the appropriate levels of beverage stocks by monitoring purchases and sales, ensuring professional, efficient and accurate service of all types of beverage in order to completely satisfy our guests during their meal experience, serving V. I .P. guests.

    Tools/Equipment Used

 

  • Bottle openers, de-canters, wine baskets, ice buckets, glassware, Infogenesis system, Accubar Inventory System, Microsoft programmes, wine lists binders and telephone

     

    Daily Duties

 

  • To ensure that the uniform provided is kept clean, presentable and in good condition, ensures that personal appearance and hygiene standards are an example for the team and demonstrate a professional image for our guests

  • To offer aperitif for guests upon arrival

 

  • To attend pre-service briefings for daily updates    

  • To promote and upsell specials

  • To prepare a daily special wine by the glass

  • To monitor stock of glass ware

 

  • To ensure that mis en place levels is kept to standards

  • To meet and greet guests in a professional and efficient manner

  • To make recommendations for guests, matching food dishes to appropriate wines

  • To serve wines and other beverages in order to meet guest requirements by providing the appropriate product in the correct manner

 

  • To ensure all beverages are correctly charged

  • To promote cordial sales to complete meal experiences 

  • To offer cheese selections in order to meet guest expectations       

 

  • To ensure all beverages and cigars are stored securely and cheeses appropriately stored. 

  • To clear and reset glasses on tables to allow efficient flow of service

  • To oversee the ordering and receiving of beverages before the end of shift to provide accurate levels of stock

  • To ensure that all cellars are kept stocked, clean and in the appropriate operational order at all times

 

  • Top ensure that Moments, Blanc and Bankers Bar wine lists and wines by the glass suggestions are consistently updated

  • To ensure that Banquet Wine lists are available for guest selection

 

  • To ensure ice buckets stands are kept clean and in order    

  • To wish “Farewell” to all guests, encouraging repeat custom

     

                Periodic Duties

 

  • To perform monthly inventories
  • To carry out any other reasonable requests as directed by your manager
  • Preparing wine suggestions for larger parties
