It is the mission and intent of the Sous Chef that the incumbent will support the Chef de Cuisine in all aspects of the Main Kitchen. The Sous Chef must be pro-active, creative and results driven, focusing on delighting our guests. The Sous Chef must check and monitor that all of the standards and recipes are maintained.  

The Sous Chef incumbent should have a minimum of 2-3 years' experience, preferably in a luxury hotel property. Responsibilities include, but are not limited to, the following:

  • Prepare weekly schedule according to forecast
  • Coordinating opening and closing procedures for the kitchen.
  • Keep the Chef de Cuisine informed with the amount of daily overtime
  • Develop standards and procedures.
  • Control and be accountable for the food and labor cost goals.
  • Train and develop colleagues to support promoting from within.
  • Be an effective listener and problem solver
  • Order products following purchasing procedures
  • Inspect food products when delivered from purchasing for quality.
  • Inspect colleague’s daily mise en place to ensure that all food products are rotated and top quality.
  • Control par levels of mise en place.
  • Attends hotel meetings 
  • Follow amenity program
  • Must keep up to date with the latest food styles and trends
  • Develop job descriptions for the different stations in the kitchen.
  • Help guide the team to 100% guest satisfaction
  • Promote communication between the different culinary departments.
  • Relieve the chefs and cooks when needed.
  • Participate in local and national media and PR culinary events.  Be an ambassador for the restaurant and the hotel.
  • Work closely with the stewarding department to promote 5 Star, 5 Diamond cleanliness in the culinary work environment.
  • Complete necessary paper work and forms in a timely manner for terminations, new hires, vacations, sick days and performance reviews for colleagues.

The Sous Chef will report directly to the Chef de Cuisine.
