Responsibilities

  • Be responsible for managing smooth daily pastry and bakery operations of the culinary department of 4 restaurants and bars including 1 2-Micheline- Starred find-dining restaurant
  • Supervisor and carry out the production standards of all pastry and bakery products in all outlets to ensure prescribed recipe and specifications are met
  • Check the quality of all incoming products related to pastry and bakery and ensure proper storage and stock rotation
  • Conduct inspection to ensure all operating equipment and working environments of both pastry & bakery kitchens are in good conditions
  • Be fully in charge of creating, revising and costing control of all recipes
  • Monitor closely on food cost, inventory levels and market lists
  • Implement and reinforce all hygiene and safety procedures according to the hotel's guidelines
  • Recruit and coach staff in pastry and bakery sections
  • Provide pastry and bakery related trainings to both kitchen and service staff 
  • Perform departmental administrative tasks
  • Build and lead a team to maintain positive as well as keep good team spirits

Requirements

  • Minimum 5 years of experience in pastry operations preferably in luxury hotel with Michelin-starred or World 50 Best outlets. Asian experienc will be an advantage
  • Excellent food & beverage and menu planning knowledge 
  • A good team player who is motivational, creativity, patience and stamina desired 
  • Strong administrative, training, interpersonal and leadership skills. Proficiency and hands-on experience in major computer software are preferred
  • Able to maintain composure under busy operation
  • Good command of both spoken and written English 
  • Keen on maintaining high levels of food quality, consistency and hygiene standards
