  • Ensures all colleagues maintain a high standard of personal hygiene and grooming at all times
  • Ensures colleagues wear designated uniforms which are well pressed and in a good state of repair and that name badges are worn at all times
  • Maintains a good knowledge of all hotel facilities and is able to answer guest questions in a quick, polite and helpful manner
  • Handles guest complaints or problems promptly, ensuring that any resolved/unresolved incidents are reported to the manager in a timely manner
  • Ensures hotel policies and procedures are adhered to
  • Ensures statutory rules and regulations are adhered to e.g. Health & Safety at Work, Weights and Measures, licensing laws etc.
  • Demonstrates a working knowledge of fire prevention and ensures colleagues follow evacuation procedures on hearing the alarm
  • Demonstrates security conscious behaviours in respect of guests, colleagues and hotel property / welfare and reports suspicious circumstances to the Manager
  • Attends meetings and training sessions that may be beneficial personally or to the restaurant operation
  • Support company’s philosophy and company culture through the use of Pillars and Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • To ensure that the Fire Life Health Safety and Security company standards and HACCP Standards are maintained and carried out. They must be monitored regularly to assist in scoring 100% on the MOHG health and safety audit.
  • To ensure that Mandarin Oriental, Macau’s grooming and appearance standards are implemented and maintained to reflect an image of professionalism and care.
  • To be able to lead and communicate with his/her colleagues during the restaurant operation
  • To supervise and participate in running of an efficient and profitable operation in the areas for which you are responsible. Liaise with your outlet manager to actively encourage a professional and dedicated team.
  • To assist the Outlet Manager/Asst Outlet Manager in enabling colleagues to consistently achieve the service and product delivery standards with a high degree of client care and service at all times
  • Oversees the set-up and operation of a station/section in a restaurant
  • Provide services for guest such as order taker, promoting the restaurant food and beverages.
  • Provide recommendation and prepare wine choice for the guest.
  • To co-ordinate the service of food and beverage efficiently and accurately.
  • To report and follow up all maintenance defaults affecting efficient and professional delivery of service.
  • To involve with service related to VIP guests
  • To respond proactively to guest queries, ensuring that appropriate action is taken in the absence of the Outlet Manager/Assistant Outlet manager, followed by effective communication
  • To identify and carry out any specific training and development needs among the team
  • To perform and check all duties related to restaurant opening/closing check list
  • Perform any other reasonable duties as required by the Outlet Manager/Asst Outlet Manager
  • To carry out and supervise daily, weekly and monthly inventory
  • Responsible for cash float and cashiering
  • To maintain and order all the store requisition
  • To prepare and maintain Buffet Tags
  • To fully inform and aware about all information connecting to Food and Beverage outlets and Mandarin Oriental Macau/Group generally
  • To maintain all Hotel’s assets
