Based at Mandarin Oriental, Bangkok, the Assistant Director of Food & Beverage supports the Director in leading the division, ensuring exceptional dining experiences and upholding the hotel’s legendary standards. This role oversees daily operations, maintains quality and service excellence, manages budgets and develops the team to deliver memorable experiences for every guest.
As Assistant Director of Food & Beverage,you will be responsible for the following duties:
Oversee the daily operations of all F&B outlets, banquets and in-room dining, ensuring seamless service aligned with the hotel’s standards of excellence.
Lead the delivery of exceptional guest experiences by anticipating needs, managing feedback and curating memorable dining moments.
Coach, mentor and develop restaurant managers and service teams to achieve professional growth and deliver consistently high performance.
Manage departmental budgets, monitor costs and maximise revenue opportunities through innovative strategies and effective upselling.
Ensure food quality, presentation, hygiene and safety standards are maintained in compliance with HACCP and all local regulations.
Partner with the culinary team to develop innovative menus, seasonal promotions and unique dining concepts.
Collaborate with Sales, Marketing and Rooms Division to support hotel-wide initiatives and enhance guest offerings.
Drive colleague engagement, foster a culture of learning and support succession planning within the Food & Beverage team.
Ensure operational resilience through effective risk management, crisis response and business continuity planning
As Assistant Director of Food & Beverage, we expect from you:
Bachelor’s degree in Hospitality Management, Business Administration or related field (Master’s degree is an advantage).
Minimum 8–10 years of progressive Food & Beverage management experience in luxury hotels or fine dining establishments, with at least 3–5 years in a senior leadership role.
Proven track record in managing multiple outlets, large banquet operations and high-profile events.
Strong leadership with the ability to inspire, coach and develop diverse teams.
Excellent business acumen, analytical skills and financial literacy.
Creative mindset for concept development, menu planning and promotional strategies.
Effective communication and presentation skills in English (Thai and other languages are an advantage).
Ability to manage multiple priorities under pressure while maintaining attention to detail.
