About the job
Based at Mandarin Oriental Punta Negra, Mallorca, the Assistant Director of Food & Beverage is responsible for overseeing all operational aspects of the division. They also support the Director of Food & Beverage with administrative tasks, including budgeting, maintaining quality standards, training, and colleague performance reviews. The role also requires providing hands-on operational support while ensuring guest satisfaction consistently meets the standards of both the hotel and the wider group.
As Assistant Director of F&B, you will be responsible for the following duties:
Assume the Director’s duties in their absence and support him in daily operations of the F&B division.
Monitor guest satisfaction, revenues, costs, sanitation, cleanliness, and hygiene to ensure high standards are consistently met.
Conduct regular inspections and follow-ups of kitchens, restaurants, and outlets, including daily hotel tours and weekly checks.
Plan activities, promotions, and menu implementations with the Director and Outlet Managers according to the annual marketing plan.
Support staffing functions such as hiring, orientation, performance appraisals, coaching, and handling colleague grievances.
Oversee inventory, beverage and store requisitions, working closely with Outlet Managers, Head Sommelier, and Cost Controller.
Ensure daily SOP training, self-audits, and quality control actions to meet Mandarin Oriental standards and continuously improve operations.
Uphold hotel policies, health and safety regulations, food safety programs, and promptly manage guest complaints and incident reporting.
As Assistant Director of F&B, we expect from you:
Experience and education
Degree in Hospitality Management or similar.
At least 2-3 years’ experience in a similar role.
Experience leading teams in the Food & Beverage departments.
Experience in luxury hospitality.
Technical Skills
Data analysis and reporting: Ability to generate and analyze recruitment reports (time-to-hire, candidate conversion rates, etc.) to assess process performance and make continuous improvements.
Familiarity with pertinent recruiting software and tools (such as LinkedIn, indeed, Glassdoor, etc.)
Knowledge of labor law: Understanding local and international labor laws impacting recruitment, including equal opportunity, labor rights, and inclusive hiring practices.
Positive and proactive attitude, and with a strong sense of responsibility.
Attention to details, self-driven, a team player with good interpersonal skills.
Proficiency in MS Office including Excel, Word and PowerPoint.
Effective communication skills both written and spoken, in Spanish and English, with strong presentation skills.
