The Assistant Director of Restaurant, Bar and Experiences supports the Director of Restaurant, Bar and Experiences in the overall management and leadership of the Restaurant, Bar and Experiences Department, ensuring the highest standards of cleanliness, presentation, and guest comfort in line with Mandarin Oriental’s legendary service standards.

In a pre-opening environment, this role is critical in assisting with setup, systems implementation, and team development to ensure operational readiness and seamless execution from opening day.

As Assistant Director of Restaurant, Bar and Experiences, you will be responsible for the following duties:

  • Support the Director of Restaurant, Bar and Experiences in all pre-opening activities, including planning, setup, and departmental readiness
  • Assist in the development and implementation of Standard Operating Procedures (SOPs) and service standards
  • Set Food and Beverage objectives and guidelines and ensure all subordinates follow thoroughly.

•    Ensure the profitability, efficiency and creative running of each Food and Beverage restaurant, bar and banqueting.

•    Maintain a team of well-trained and motivated Food and Beverage staff in order to keep up the image of the hotel.

•    Maintain complete knowledge and comply with all hotel and departmental policies and procedures.

•    To supervise the function of all F&B employees, facilities and financial performance to ensure maximum departmental profit and cost efficiency is achieved.

•    To control and analyze, on an on-going basis, in order to optimize the following:

o    Quality levels of products and service

o    Guest Satisfaction

o    Quality Measurements (such as LQE & MO Pillars & Forbes)

o    Merchandising and Marketing

o    Financial Performance

o    Hygiene and cleanliness

•    To coordinate and supervise the preparation, presentation and service of food and beverage products to ensure the highest quality at all times.
