The Role

The Bar Manager is responsible for managing all aspects of MOBar/Specialty Bar/assigned outlet. This includes but is not limited to the selection, development and performance management of colleagues, optimizing profits and increasing sales and ensuring guest satisfaction in every step of guest’s experience. Manages all operational issues ensuring Mandarin Oriental standards of quality and service are met.


Key Responsibilities

Guest Experience & Brand Standards

  • Uphold Mandarin Oriental’s Pillars of Legendary Quality Experiences to ensure exceptional guest satisfaction
  • Oversee daily operations of assigned outlet
  • Ensure personalized, courteous, and professional service at all times
  • Monitor guest satisfaction, address feedback promptly, and maintain guest preference records
  • Maintain high grooming, hygiene, and professional image standards for self and team
  • Promote hotel services and cross-sell outlets to guests

Operations Management

  • Ensure bars are fully stocked, properly equipped, clean, and well‑maintained
  • Maintain consistent beverage quality and service standards
  • Coordinate with Kitchen, Stewarding, Housekeeping, Engineering, Purchasing, Beverage Manager, and Sommelier for smooth operations
  • Develop and update departmental SOPs and Operations Manuals aligned with MO standards
  • Ensure full compliance with health, safety, and hygiene regulations
  • Recommend improvements to equipment, service methods, and guest experience innovations

Financial Management & Cost Control

  • Maximize profitability through revenue growth and cost control
  • Manage operational budgets and approve store requisitions
  • Control inventory, purchasing, and retail operations for assigned outlet
  • Minimize waste and control expenses without compromising quality

People Management & Training

  • Lead, coach, and motivate the bar team to deliver service excellence
  • Conduct staff briefings, meetings, and performance appraisals
  • Ensure proper staffing, scheduling, punctuality, grooming, and uniform standards
  • Enforce hotel policies, safety procedures, and disciplinary processes

Administration & Reporting

  • Prepare and submit operational reports, schedules, guest comments, and records accurately and on time
  • Ensure proper requisitioning and inventory documentation

 

Qualifications & Skills

  • Degree or diploma in Hospitality Management or related field preferred
  • Minimum 3–5 years of experience in bar or beverage management, preferably in a luxury hotel environment
  • Strong knowledge of mixology, spirits, wines, and beverage trends
  • Proven leadership, team development, and training skills
  • Strong financial acumen in budgeting, cost control, and inventory management
  • Excellent communication, guest relations, and interpersonal skills
  • High standards of professionalism, grooming, and attention to detail
  • Ability to work flexible shifts, including evenings, weekends, and holidays
  • Proficient in POS systems and basic administrative tools
  • Passion for luxury hospitality, innovation, and personalized service
