About the job
Based at the Mandarin Oriental Savoy, Zurich within Main Kitchen. The Chef de Cuisine is responsible for the day to day running of the kitchen and overall quality of products produced. The Chef de Cuisine reports to the Executive Chef and the Hotel Manager.
As Chef de Cuisineyou will be responsible for the following duties:
Design and implement menus that fit the requirements of Savoy Brasserie & Bar, In Room Dining, Banquet and 1838 Rooftop Bar as set out by the Executive Chef
Co-ordinate with other areas with regards to menu implementation
Provide recipes and costing according to the ordering system, training and experience to all staff so as to improve on all things where possible
Relay any information from the kitchen or to the kitchen that is relevant to the daily operation of the department through daily briefings or staff meetings
To be aware of and adhere to company policies and statutory requirements with regards to health and safety, sanitation, fire procedures and HACCP
Ensure that the staff maintain a high standard of cleanliness and sanitation in and around all culinary work areas and ensure that all colleagues clean their stations after every service
Set and maintain a very high food standard for all colleagues to aspire to and learn from
Provide necessary training to staff for relevant jobs and cooking procedures.
As Chef de Cuisine, we expect from you:
Degree or certificate in culinary arts.
Several years of experience as a chef, with at least 1 year of experience as an Executive Sous Chef or Chef de Cuisine in an international luxury hotel chain/group
Possess creativity and passion to keep up to date with the latest culinary trends.
Western cuisine background is preferred
Excellent communication and interpersonal skills
Excellent stakeholder management skills
Possess the ability to work with people across all demographics and culture
Enjoy interacting with guests, employees and third parties
Self-motivator and driver
Possess good foundation in mathematical skills, including knowledge and experience in budgeting, profit/loss concepts
Excellent German and English skills, both spoken and written. Further foreign language skills are an advantage
