The Role
As Chef de Partie, you will oversee a specific section of the kitchen, ensuring dishes are prepared to the highest standards of quality and presentation. You will play a key role in training junior chefs, maintaining consistency, and contributing to the success of the culinary team during this exciting pre-opening phase.
Key Responsibilities
Supervise and coordinate a specific kitchen section (e.g., grill, sauce, pastry, or larder) to deliver consistent, high-quality dishes.
Work closely with the Chef de Cuisine, Sous Chef, and Junior Sous Chef to develop menus, recipes, and plating standards aligned with Mandarin Oriental’s global reputation for excellence.
Lead and mentor Commis Chefs, ensuring proper training, motivation, and adherence to hygiene and safety standards.
Maintain mise en place, stock control, and inventory management for your section.
Uphold the highest standards of food presentation and taste, ensuring guest satisfaction and brand consistency.
Contribute to the success of the pre-opening phase by assisting in kitchen setup, equipment testing, and operational readiness.
Collaborate with colleagues across departments to ensure seamless service delivery.
Qualifications & Experience
Proven experience as Chef de Partie or strong Demi Chef experience in a luxury hotel or fine dining environment.
Solid knowledge of international cuisines and modern culinary techniques.
Strong leadership and communication skills with the ability to inspire and develop junior team members.
Excellent organizational skills and attention to detail.
Commitment to maintaining hygiene, safety, and sustainability standards.
Flexibility and resilience to thrive in a dynamic pre-opening environment.
