About the job

Based at Mandarin Oriental Lutetia, Paris the Chef de Partie Tourier reports to the Sous Chef.

As Chef de Partie Tourier you will be responsible for the following duties:

  • Responsible for the organization and smooth operation of the dough/viennoiserie section.

  • Supervise, guide, and support commis and apprentices; actively contribute to their training and skills development.

  • Produce viennoiseries and laminated doughs (croissants, pains au chocolat, etc.) following technical sheets defined by the Pastry Chef.

  • Ensure consistency and high standards in product shaping, proofing, and baking.

  • Guarantee impeccable plate presentation and product uniformity before service.

  • Maintain the freshness, quality, and compliance of all products served.

  • Oversee the cleaning and maintenance of workstations, equipment (mixers, dough sheeters, ovens, etc.), and storage areas.

  • Ensure compliance with HACCP hygiene and safety standards at all times.

  • Manage inventory, monitor stock levels, and place supply orders as needed.

  • Ensure proper product storage and labeling to minimize waste and loss.

  • Contribute to the development of new recipes and technical documentation alongside the Pastry Chef.

  • Demonstrate initiative and creativity to enhance the product range and production processes.

As Chef de Partie Tourier we expect from you:

  • Minimum of 2 years’ experience as a Tourier in a high-end or equivalent pastry establishment.
  • Strong technical knowledge of laminated doughs and traditional French viennoiseries.
  • Ability to work independently and manage a small team.
  • High standards of hygiene, organization, and precision.
  • Creativity and willingness to contribute to recipe development.
  • Good understanding of HACCP and food safety protocols.
