About the job

Based at the Mandarin Oriental Downtown, Dubai within within the Bakery section in Dubai, the Commis will support the preparation and presentation of high-quality baked goods. Will ensure that all items are prepared with consistency, care, and attention to detail, while maintaining timely delivery and upholding the highest standards of hygiene and quality. The Commis reports to Chef de Partie.

As a Commis, you will be responsible for the following duties:

• Assist in the preparation of ingredients, including washing, peeling, and basic prep tasks, ensuring all mise en place is completed to the highest standards.
• Support the bakery team in setting up and replenishing buffet items, maintaining presentation and freshness throughout service.
• Organize and store requisitioned items properly and assist in the collection of supplies from storage areas.
• Monitor stock levels and promptly inform supervisors when ingredients are running low to ensure continuous kitchen operation.
• Maintain high standards of cleanliness in all kitchen and stewarding areas, reporting any maintenance or hygiene concerns.
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Commis, we expect from you: 

• High School qualification or equivalent is required.
•  A Degree or Higher National Diploma in Hospitality or Culinary Arts is preferred.
• Minimum of 1 year of culinary experience as a Commis in a high-volume hotel or restaurant is preferred.
• Basic skills in food handling, preparation, and kitchen operations.
• Familiarity with basic food hygiene and safety standards is an advantage.
• Passion for bakery and willingness to learn and grow within the culinary team.
