About the job

Based Mandarin Oriental Jakarta, the Director of Food and Beverage is responsible for all day to day operational activities within the Food and Beverage Division, providing functional assistance and direction to the Food & Beverage operation. The Director of Food and Beverage reports to the General Manager and directly manage the Food and Beverage Operations Manager, all Outlet Managers and the Catering Manager.
 

As Director of Food and Beverage, you will be responsible for the following duties:

  • Ensure the profitability, efficiency and creativity in each Food and Beverage outlet
  • Partner with Sales & Marketing to increase exposure and coverage of the Food & Beverage outlets in various local and international media.
  • Analyze and control food and beverage cost in order to achieve financial targets.
  • Plan menus, prices and promotional events for all Food & Beverage outlets in order to maximize revenue generating opportunities.
  • Identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest comment cards and guest incident reports, and formulate action plans.
  • To encourage proactive, efficient and effective inter-departmental communication in order to promote a climate of teamwork and enthusiasm.
  • To conduct and assist colleagues counseling and disciplinary procedures in accordance with Mandarin Oriental, Jakarta procedures.
  • To ensure that Mandarin Oriental, Jakarta’ s grooming and appearance standards are implemented and maintained to reflect an image of professionalism and care.
  • Stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation.
  • To carry out annual performance and development review on all F&B colleagues using the Mandarin Oriental Hotel Group Performance and Development Management System.
  • To ensure that the health and safety company standards are maintained and carried out. They must be monitored regularly to assist in scoring 100% on the MOHG health and safety audit.
  • To develop and implement the Standard Operating Procedures for the Division.
  • To ensure customer satisfaction from arrival to departure in accordance to standards and procedures manual and the Legendary Quality Experience (LQE).
  • Maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Group’s and international luxury hotel standards.
  • Meet and greet all VIPs and influential clients and ensure there is follow-up on all discussed details.
  • Be part of the Executive Committee team and provides advice and support in decisions and projects relating to the entire hotel.
  • To lease with the Learning & Development Leader on departmental learning and development needs.
  • Perform any other reasonable duties as required by the General Manager from time to time.

Financial responsibilities

  • Manage budget of the entire Food & Beverage Division, monitor and control the expenses and ensure that there is no substantial overrun of costs
  • Accurately forecast financial performance
  • Review constantly and control operational cost without reducing quality and guest experience.
  • Work closely with Finance in reviewing financial performance regularly.

People responsibilities

  • Provide support to People & Culture in recruiting, training and developing colleagues.
  • Build effective teams, and provide comprehensive development and succession plans for the division.
  • Introduce effective training program across the division.

As Director of Food and Beverage, we expect from you:

Educational Background

  • A bachelor’s degree in hospitality management or a related field

Experience

  • A minimum of 3-5 years of experience in a management role, preferably in a high-volume hotel, resort, or luxury event venue.

Technical Proficiency

  • The ability to develop a long-term vision for the department, set clear goals, and create a roadmap to achieve them. This includes anticipating market trends and adapting the department's offerings accordingly.
  • Exceptional skills in recruiting, training, mentoring, and retaining top talent. A Director of Food & Beverage must be a master at succession planning and fostering a positive and productive work environment.
  • Competent to lead a team through significant changes, whether it's the adoption of new technology, a shift in service standards, or a departmental restructuring.
  • Understanding of profit and loss (P&L) statements. The Director is responsible for developing a budget, forecasting revenue, and controlling costs related to labor, food, beverage, and supplies to ensure profitability.
  • Ability to work with the sales team to set pricing strategies, identify opportunities for upselling, and maximize revenue per event.
  • Ability to have negotiating favorable terms with vendors, suppliers, and even clients for large-scale events.
  • Understanding of all operational procedures. This allows them to set high standards and troubleshoot any major issues that arise.
  • Ability to handle high-pressure situations and resolve complex problems with clients or staff quickly and effectively.
  • A keen eye for detail to ensure that every aspect of service, from the timeliness of a food course to the cleanliness of the event space, meets the highest quality standards.
  • Ability to communicate clearly and persuasively with executives, department heads, and high-profile clients.
  • Building and maintaining strong relationships with key clients and acting as the final point of contact for any major issues.
