About the job
Based at the Mandarin Oriental Savoy, Zurich within Food & Beverage Division in Zurich, the Director of Food & Beverage is responsible for overseeing and maximizing guest experience, quality standards and business performance of the Food & Beverage outlets. The Director of Food & Beverage reports to the Hotel Manager.
As Director of Food & Beverage, you will be responsible for the following duties:
- Oversee and supervise all Food & Beverage operations, including colleagues, facilities, and financial performance, to ensure optimal profitability, cost control, and operational efficiency.
- Continuously monitor, control, and analyse key performance indicators to optimise:
- Product and service quality
- Guest satisfaction
- Quality assurance standards (including LQE and MOQA pillars)
- Merchandising and marketing initiatives
- Financial performance
- Hygiene, cleanliness, and food safety (HACCP)
- Coordinate and supervise the preparation, presentation, and service of all food and beverage offerings, ensuring the highest quality standards are maintained at all times.
- Collaborate with the Materials Manager to define minimum and maximum stock levels and approve all wine purchases and other food and beverage items in accordance with hotel policies and procedures.
- Closely monitor daily, weekly, and monthly financial performance of all F&B outlets, identify areas of improvement, and implement corrective actions where required.
- Actively participate in the preparation of the annual budget and marketing plan, taking ownership of the Food & Beverage Division components.
- Prepare and submit monthly forecasts for all Food & Beverage revenues and expenses.
- Ensure that daily SOP training is conducted in line with Mandarin Oriental standards and brand expectations.
- Promote and embed the company’s philosophy and culture by consistently delivering Legendary Quality Experiences (LQE) to achieve high levels of guest satisfaction and fulfilment of the Mission Statement.
- Ensure full compliance with health, safety, and security regulations in accordance with FHLSS, including awareness and management of workplace hazards.
- Ensure compliance with all local food safety regulations and Food Acts.
- Report and follow up on any defects in building infrastructure, plant, or equipment in accordance with hotel procedures, and ensure all accidents involving colleagues, guests, or visitors are properly recorded and reported.
- Provide strong leadership, guidance, and support to all colleagues reporting to the F&B Manager, fostering a positive and high-performance work environment.
- Establish and maintain effective employee relations, promoting engagement, development, and retention.
- Lead all people management processes including recruitment, interviewing, hiring, onboarding, performance appraisal, coaching, counselling, and, when necessary, disciplinary actions or termination, in consultation with the General Manager and Director of Human Resources.
As Director of Food & Beverage, we expect from you:
- At least 5 years' experience in similar capacity, preferably with luxury hotel experience
- Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding
- Ability to thrive in a fast-paced, dynamic environment and adapt to changing business needs
- Maintains close connection with daily operations, ensuring standards of excellence are consistently upheld across all dining experiences
- Must have strong understanding of Food and Beverage financials including cost and par controls
- Experience in Food and Beverage budget preparation, profit and loss statement analysis and forecasting
- A strategic thinker with a pragmatic, hands-on approach to problem solving
- Excellent managerial and interpersonal skills
- Passion in customer service and hospitality industry
- Able to work under pressure
- International exposure will be an advantage
- Fluent in German and English, knowledge of other languages is a plus
