Director of Restaurant and Bar

Mandarin Oriental New York is looking for a Director of Restaurant and Bar to join our Food and Beverage Department team.

About the job

Based at the Mandarin Oriental New York within the Food and Beverage Department in New York City, the Director of Restaurant and Bar is responsible for managing and organizing the service staff efficiently, overseeing reservation seating, leading the welcome to the guest and constantly circulating the dining room searching for opportunities to improve service. The Director of Restaurant and Bar will also assist in formulating the long-term strategy of the MO Lounge.

The Director of Restaurants reports to the Director of Food and Beverage.

As Director of Restaurant & Bar, you will be responsible for the following duties:

  • Support company's philosophy and company culture through the use of Pillars of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Support company's philosophy and company culture through the use of Guiding Principles and D.E.L.I.G.H.T as part of ensuring Guest Satisfaction and the achievement of our Mission Statement.
  • Provide leadership and support for all MO Lounge and Bar colleagues.
  • Trains, evaluates and schedules MO Lounge and Bar colleagues in accordance with the standards of the company policies and guidelines.
  • Develop and implement system for checking maintenance of tabletop supplies through staff side work duties.
  • Create side work schedules for all positions. Ensure compliance and follow through.
  • Keep record and communicate of any exemplary or deficient examples of food, décor or service.
  • Performs administrative duties such as, but not limited to, scheduling, payroll and inventory.
  • Scheduling, recruitment and interviewing for new colleagues
    • Provide excellent service at all time to all of our guests
    • Assist Guest courteously and efficiently
    • Managing day- to day operations
    • To supervise the maintenance and cleanliness of the MO Lounge and Bar at all times
    • Excellent knowledge of food and beverage.
    • To manage proper staffing level.
    • To manage proper supplies level.
    • Constant training and development of colleagues.
    • Chair monthly departmental meeting.
    • Conduct daily communication meeting with staff prior to shift
    • Ensure MO Lounge and Bar service standard follow LQA/Forbes.
    • To visit all of our guest tables during or after their visit, to ensure satisfaction.
    • To manage, coach, and counsel colleagues, including disciplinary procedures.
    • Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook.
    • Attend weekly and monthly meeting.
    • Communicate all group information/changes to existing information to appropriate hotel colleagues in an accurate and timely manner
    • Entertain clients, as appropriate
    • Proper phone etiquette.
    • Generate a good atmosphere
    • Coordinate all aspects of service to include but not limited to:
  • Food and beverage requirements
  • Timing of events
  • Special attention guests
  • Table setup
  • Special requests
  • Complimentary dessert, drinks etc.
  • Billing instructions
  • Authorized signatures
  • Décor (to include floral) requirements

As Director of Restaurant & Bar, we expect from you: 

  • Reading, writing and oral proficiency in the English language.
  • Willing to work a flexible schedule and holidays.
  • Be a self-motivator and motivator of others
  • Work in a safe, prudent and organized manner.
  • Have an in-depth knowledge of food preparation
  • Have an in-depth knowledge of wine
  • Have an in-depth knowledge of beverages and cocktails
  • Be able to relate to all levels of guests and management.
  • Have a minimum of 3 years’ experience in similar position, preferably in luxury environment
  • Have prior experience in unionized F&B, preferably Local 6.
  • Have the ability to handle multiple tasks at one time.
  • Have excellent communication and organization skills
  • Be able to consistently delight and satisfy our guest
  • Have the ability to handle guest requests in a detailed manner
  • Must have excellent attention to details, and extensive service knowledge

Salary and Benefits:

  •  Salary $90,000 to $100,000 yearly- commensurate with experience
  • A competitive benefits package, including health, dental and vision, 401(K), etc
