About the job 

Based at Mandarin Oriental, Hong Kong within Food & Beverage Division in Hong Kong, the Executive Chinese Chef is responsible for providing strong leadership and culinary vision to uphold exceptional Cantonese dining standards in alignment with the Hotel’s strategic direction. The Executive Chinese Chef reports to the Executive Chef.

As Executive Chinese Chef, you will be responsible for the following duties:

  • Responsible for the implementation of the relevant operating policies for Man Wah Restaurant and Chinese Banqueting
  • Responsible for formulating the direction and guidelines for the Chinese cuisines for Man Wah Restaurant and Chinese Banqueting
  • Monitor the food cost and quality of Man Wah Restaurant and Chinese Banqueting, so as to maintain a good gross margin and production
  • Establish Chinese kitchen management policies, the scope of duties at all levels, and ensure daily operation arrangements
  • Collect customer opinions, market, and the latest industry information, create and launch seasonal dishes regularly
  • Supervise and direct kitchen production and daily operations
  • Supervise and direct (HACCP) work to ensure that all food meets food hygiene and safety standards
  • Host daily kitchen meetings, so that colleagues at all levels of various sections can understand hotel policies, guest opinions and coordinate daily and emergency work arrangements
  • Review the use of equipment and appliances in each section to set up an annual relevant purchase plan
  • In order to cooperate with the hotel and personal development, this job description will be reviewed regularly

As Executive Chinese Chef, we expect from you:

  • Minimum 8-10 years of relevant culinary experience in Chinese cuisine, with at least 3-5 years in a senior leadership role, preferably within a luxury hotel or Michelin-starred establishment
  • Proven track record in leading high-end Chinese restaurants, with demonstrated success in achieving or maintaining Michelin star recognition; experience in pursuing a second Michelin star is a strong advantage
  • Professional culinary qualifications or relevant certifications in Chinese cuisine; formal training from a recognized culinary institution is preferred
  • Solid expertise in menu development, quality control, cost management, and kitchen operations, with a strong focus on excellence and consistency
  • Excellent communication and interpersonal skills, with a collaborative and results-driven mindset
  • Fluent in spoken Cantonese and Mandarin; good command of English is preferred
