About the job 

Based at the Mandarin Oriental Punta Negra, as Restaurant Captain you will be responsible for overseeing a designated service area, ensuring smooth operations, high service standards, and an exceptional guest experience in line with Mandarin Oriental values. 

As F&B Captain, you will be responsible for the following duties:  

  • Oversee a designated section, ensuring smooth service and a welcoming guest experience. 

  • Support supervisors by completing daily checklists and maintaining service standards. 

  • Demonstrate strong knowledge of the outlet’s concept, menu, and beverages, confidently guiding and advising guests. 

  • Ensure mise en place and cleanliness standards are consistently met before and during service. 

  • Operate the POS system efficiently, including order processing, billing, and non-cash payments. 

  • Deliver attentive, friendly, and personalized service by anticipating and understanding guest needs. 

  • Upsell food, beverages, and experiences in a natural and service-oriented manner to enhance guest satisfaction and revenue. 

  • Communicate guest preferences, allergies, and special requests clearly to kitchen and management teams, supporting seamless operations. 

As F&B Captain, we expect you:  

Experience and education 

  • Degree in Hospitality Management or similar. 

  • At least 2-3 years’ experience in a similar role. 

  • Proven experience leading teams within Food & Beverage, ideally in a luxury hospitality environment. 

Technical Skills 

  • Strong communication skills and a collaborative, team-oriented approach. 

  • A genuine passion for guest interaction, with the ability to anticipate needs and deliver personalized service. 

  • A visible and confident presence on the floor, leading by example during service. 

  • A warm, friendly, and professional attitude, with a natural ability to create memorable moments.
