The Role
The Overnight Baker is responsible for preparing a variety of freshly baked breads, pastries, and other bakery items during the overnight shift, ensuring they are ready to the highest standards for the following day’s operations.
Working as part of the culinary team, the Overnight Baker demonstrates consistency, precision, and craftsmanship while maintaining the highest standards of quality, hygiene, and food safety.
Key Responsibilities
- Prepare and bake a variety of breads, rolls, pastries, and other bakery products according to established recipes and quality standards.
- Ensure bakery products are prepared according to required production schedules and are ready for morning operations.
- Prepare doughs, fillings, batters, and other bakery components, ensuring proper fermentation, proofing, and baking.
- Maintain consistency in the taste, texture, presentation, and overall quality of all bakery products.
- Monitor baking times, temperatures, and equipment to ensure optimal product quality.
- Follow established recipes, portioning standards, and presentation guidelines.
- Coordinate with the Pastry and Culinary teams to ensure production requirements are completed efficiently and on time.
- Ensure proper storage, labeling, rotation, and handling of ingredients and finished products.
- Minimize food waste through careful preparation, proper storage, and responsible use of ingredients.
- Maintain cleanliness and organization of the bakery work area, equipment, and storage spaces throughout the shift.
- Adhere to all food safety, sanitation, hygiene, and workplace safety standards.
- Properly operate and care for bakery equipment and immediately report any maintenance concerns.
- Monitor ingredient levels and communicate replenishment requirements to the appropriate team member.
- Support special events, banquet requirements, and other bakery production needs when required.
- Work independently during overnight hours while maintaining effective communication with the wider Culinary team.
- Perform other duties as assigned to support the smooth operation of the department.
Qualifications & Experience
- Diploma or vocational qualification in Baking, Pastry Arts, Culinary Arts, or a related discipline is preferred.
- Relevant professional training or certification in baking is an advantage.
- Previous professional experience as a Baker, Overnight Baker, Commis Baker, or similar bakery position.
- Experience within a luxury hotel, high-end restaurant, bakery, or similar hospitality environment is preferred.
- Hands-on experience in bread and dough production, fermentation, proofing, and baking.
- Strong knowledge of baking techniques, ingredients, preparation methods, and equipment.
- Good understanding of food safety, hygiene, and sanitation practices.
- Strong attention to detail with a commitment to consistency and quality.
- Good time management and organizational skills, particularly when working within overnight production schedules.
- Ability to work independently with minimal supervision.
- Ability to manage multiple preparations while meeting required production timelines.
- Collaborative and positive approach when working with other members of the Culinary team.
- Physically able to perform the requirements of a professional kitchen environment.
- Willing and able to work overnight shifts, including weekends and public holidays as required.
