About the job
Based at Mandarin Oriental Punta Negra, Mallorca, as the Pastry Sous Chef, you will be responsible to oversee all day-to-day operations of the pastry and bakery section of the kitchen such as cakes, cookies, pies and bread following traditional and modern recipes.
As Pastry Sous Chef, you will be responsible for the following duties:
Develop new recipes and innovate and develop new and exciting deserts to enhance the hotel´s menu and engage customers
Decorating pastries using different icings to ensure beautiful and appealing presentations
Assist the Executive Pastry Chef with administrative duties, including scheduling and general team administration.
Inventory management, monitor and order ingredients and supplies needed for the pastry section.
Health and safety compliance, ensure the pastry section adheres to health and safety regulations.
Collaboration, work closely with the Executive Pastry Chef and other Kitchen staff to ensure the quality of the products.
As Pastry Sous Chef, we expect from you:
Experience and education
Culinary School/ University Degree with at least 2-3 years’ experience as a pastry chef, ideally in Luxury Hospitality.
Technical Skills
Baking Techniques: Mastering the fundamentals of baking.
Flavor Combination: Balancing and combining flavors to create innovative pastries.
Patisserie Expertise: Specializing in making a variety of pastries, desserts, breads, and baked goods.
Chocolate Sculpting & Sugar Artistry: Crafting intricate designs using chocolate and sugar.
Food Safety (HACCP): Maintaining a clean, sanitary work environment and adhering to food safety standards.
Menu Development: Creation of menu items in collaboration with the Executive Pastry Chef.
Plating Desserts: Designing and presenting desserts in an aesthetically pleasing manner.
