About the job Based at Mandarin Oriental, Barcelona, within the Culinary Department, the Culinary Trainee supports the Kitchen team while developing a comprehensive understanding of culinary operations, food preparation techniques, hygiene standards, and luxury hospitality service. The Culinary Trainee reports to the Executive Chef, Sous Chef, or Chef de Partie.
As Culinary Trainee, you will be responsible for the following duties:
1. Ensure that the uniform provided is clean and in good condition, maintaining exemplary personal appearance and hygiene standards at all times.
2. Ensure personal knives and kitchen tools are kept clean, sharp, and properly maintained.
3. Prepare and organize the daily mise en place required for kitchen operations. 4. Work collaboratively as part of the culinary team to ensure smooth and efficient service.
5. Prepare meats, fish, garnishes, and other food items according to established recipes and quality standards.
6. Cook and present dishes ordered in the hotel's outlets following culinary and presentation standards.
7. Clean and maintain all workstations and kitchen areas in accordance with food safety, health, and hygiene regulations.
8. Prepare both hot and cold food items for the various kitchen sections.
9. Assist in the preparation of a variety of hot and cold sauces.
10. Operate, clean, and maintain kitchen equipment, machinery, and utensils correctly and safely.
11. Carry out cleaning and sanitation procedures according to established kitchen standards.
12. Assist in controlling goods received, ensuring compliance with quality, hygiene, storage, and conservation standards.
13. Demonstrate awareness of cost control by minimizing waste, following standard recipes, and supporting environmentally responsible practices.
14. Observe and practice meat-cutting techniques under the supervision of senior culinary professionals.
15. Prepare vegetables, salads, starches, and other supporting products required for daily operations.
16. Follow and prepare basic recipes accurately while adhering to established quality standards.
17. Apply different culinary techniques and cooking methods to develop professional culinary skills.
18. Assist the Chef and the culinary leadership team with any duties required to ensure efficient kitchen operations and exceptional guest satisfaction.
