About the job
Based at Mandarin Oriental Lutetia, Paris within the Saint Germain Restaurant, the Restaurant Manager reports to the Director of Restaurants.
As Restaurant Manager you will be responsible for the following duties:
Ensure the organization and smooth operation of the Salon Saint-Germain, representing the image and values of Hôtel Lutetia / Mandarin Oriental.
Guarantee service quality, operational efficiency, and the satisfaction of both guests and team members.
Drive the profitability of the outlet and contribute to its promotion and overall management.
Implement and uphold quality standards (LQA, Forbes) as well as internal procedures.
Ensure effective communication between teams, particularly between the front-of-house and kitchen.
Lead, train, motivate, and unite the team within a positive working environment, while participating in recruitment and onboarding.
Manage schedules, attendance, daily briefings, and staff performance evaluations.
Ensure compliance with hygiene and safety regulations (HACCP) and labor laws.
Oversee the maintenance of the establishment, as well as the management of equipment, inventories, linen, and supplies.
Contribute to continuous service improvement and the implementation of new concepts or products in collaboration with management.
As Restaurant Manager we expect from you:
A minimum of five years’ experience in a similar position within a five-star hotel or palace is required.
Fluency in both French and English is essential.
