About the Job:

As Stewarding Manager at Mandarin Oriental Paris, you will be rresponsible for all aspects of cleanliness, hygiene, and safety management in the food and beverage service areas. Ensures the quality of cleanliness, hygiene, and sanitation in accordance with local laws and regulations as well as Mandarin Oriental Hotel Group standards

As Stewarding Manager, you will be responsible for the following duties:

  • Oversee and coordinate all stewarding operations to ensure the highest standards of cleanliness, hygiene, and sanitation across all kitchen and back-of-house areas.
  • Lead, train, and motivate the stewarding team to support culinary and F&B operations efficiently and professionally.
  • Ensure strict compliance with health, safety, and hygiene regulations in accordance with local legislation and hotel brand standards.
  • Monitor and manage the cleaning, storage, and maintenance of all kitchen equipment, utensils, and service ware.
  • Implement and maintain effective waste management and recycling programs to support sustainability goals.
  • Manage stewarding inventory, including chemicals and cleaning supplies, ensuring cost control and timely replenishment.
  • Coordinate closely with the Executive Chef, F&B Manager, and Engineering to support smooth daily operations and special events.
  • Maintain impeccable cleanliness and organization in all stewarding areas, ensuring readiness for health inspections and audits.
  • Foster a culture of discipline, responsibility, and excellence within the stewarding team.

As Stewarding Manager, We Expect from You:

  • Minimum of 3 years’ experience in a similar stewarding or hygiene management role within a luxury hotel or fine dining environment, including experience supporting banquet and room service operations.
  • Proven leadership and team management skills, with the ability to train, motivate, and supervise a diverse stewarding team effectively.
  • Excellent organizational and time-management abilities, capable of coordinating multiple tasks and shifts efficiently.
  • Strong communication skills and a collaborative mindset to work closely with culinary, F&B, and housekeeping teams.
  • Ability to work under pressure while maintaining high standards of cleanliness, hygiene, and safety.
  • Fluent in French and English (written and spoken); additional languages are considered a plus.
  • Deep understanding of hygiene standards, food safety protocols (e.g., HACCP), and stewarding best practices in luxury hospitality.
  • Experience managing department budgets, controlling operational costs, and optimizing chemical and equipment usage.
