About the job

Based at the Mandarin Oriental, Hong Kong within Food & Beverage Service Division in Hong Kong, the Restaurant Manager - Terrace Boulud is responsible for the smooth day-to-day restaurant operations, achievement of the financial targets and elevating the services quality up to the Hotel’s standard. The Restaurant Manager reports to the Director of Operations - Terrace Boulud.

As Restaurant Manager - Terrace Boulud, you will be responsible for the following duties:

  • Be responsible to maintain a smooth daily operations and administration

  • Advise and consult with the Director of Operations - Terrace Boulud as to service procedure, quality and quantity of products, menus, merchandising and promotional programmes

  • Liaise closely with the Executive Chef and Sous Chefs with regard to food quality or presentation

  • Maintain quality products & services at the highest level and correct the un-fulfilled elements if necessary

  • Deliver an elevated guest experience aligned with MOHG standard, monitor guest feedback channels, handle guest complaints and lead initiatives for improvement

  • Enforce rigorous hygiene and sanitation protocols aligned in full compliance with HACCP requirements

  • Set up a demanding yet achievable annual budget and labour forecast on a monthly basis

  • Analyze the business situation constantly and seek ways to improve performance in meeting financial goals and eliminating wastage to reduce costs and maximize revenue

  • Be responsible for recruitment and onboarding, delivering departmental trainings, providing professional development plans for colleagues and lead the team to achieve departmental goals and total guests' satisfaction

As Restaurant Manager - Terrace Boulud, we expect from you:

  • At least 5 years of relevant working experience in similar capacity in hotel Food & Beverage, preferably with pre-opening experience in a luxury hotel

  • Strong communication skills and proficient in Cantonese, English and Mandarin

  • Demonstrated success in achieving financial targets and proven track record of maintaining high quality standard

  • Excellent leadership and interpersonal skills

  • Passionate in customer service and hospitality industry

  • International exposure will be an advantage
