The Role
The Sommelier ensures that guest satisfaction is achieved through providing efficient and qualitative wine offerings, maintaining a clean and comfortable work environment, working efficiently, and enhancing the hotel’s reputation for excellence.
Key Responsibilities
- Support company's philosophy and company culture through the use of Service Pillars of Legendary Quality Experiences
- To ensure that relevant grooming standards are followed, both personally and by the team, reflecting a professional image for our guests
- To attend daily F&B morning briefing and weekly F&B Meetings
- Conduct regular wine trainings and sommelier meetings for staff
- To maintain wine service standard & update Wine service SOP’s
- Manage and update the master wine list in line with current trends and demand of the ever-changing market
- Propose new wine promotions and organize special wine dinners to attract business and drive additional PR for the hotel
- Promote and improve sales of wines by introducing and recommending wines and matching food dishes to appropriate wines
- Control beverage cost in collaboration with F&B team
- Manage master wine costing sheet and ensure all wines are correctly charged and the best value for money is given to the guest while maintaining budgeted wine costs
- Establish & retain supplier relations
- Ensure wine stock levels are appropriate & oversee the ordering and receiving of wines according to business levels and seasonality
- To promote Aperitif sales to complete the meal experience within the hotel
- To record guest beverages preferences of VIP guests in any outlet as appropriate
- To oversee and check all wine related equipment such as glasses, opening equipment and decanters
- To keep record and produce reports of breakage and spoilage to keep awareness of cost induced
Qualifications & Success Profile
- Degree, diploma, or certification in Hospitality Management, Food & Beverage, or Wine Studies preferred
- Recognized wine certification (e.g., WSET Level 2 or 3, Court of Master Sommeliers Introductory/Certified) strongly preferred
- Minimum 2–4 years of experience as a Sommelier or Wine Specialist, ideally in a luxury hotel, fine-dining restaurant, or high-end bar
- In-depth knowledge of Old and New World wines, grape varietals, regions, vintages, and production methods
- Strong understanding of wine and food pairing principles, menu engineering, and guest tasting preferences
- Proven ability to curate, manage, and maintain wine lists aligned with luxury brand positioning
- Experience in wine inventory management, cellar organization, stock rotation, and cost control
- Exceptional guest engagement and storytelling skills with the ability to deliver personalized and anticipatory service
- Strong communication skills and confidence in making tailored recommendations to diverse, international clientele
- High standards of professionalism, grooming, discretion, and attention to detail
- Knowledge of service etiquette, health and safety standards, and responsible alcohol service
- Ability to work collaboratively with culinary, bar, and service teams during pre‑opening setup and ongoing operations
- Passion for continuous learning, global wine trends, and delivering Legendary Quality Experiences
- Flexible to work on evenings, weekends, holidays, and extended hours during the opening phase.
