The Role

The Steward Supervisor will be a key member of the pre-opening team, responsible for supervising stewarding operations to ensure the highest standards of cleanliness, hygiene, and efficiency across all kitchens and back-of-house areas. This role will help establish operational systems, train team members, and support the successful launch of Mandarin Oriental Makati.

Key Responsibilities

Pre-Opening Preparation

• Assist in setting up stewarding areas, equipment, and operating procedures.
• Support the recruitment, onboarding, and training of stewarding staff.
• Ensure readiness of stewarding operations for hotel opening.

Daily Operations

• Supervise stewarding team members in dishwashing, cleaning, and waste management.
• Maintain cleanliness and sanitation standards in all kitchens and back-of-house areas.
• Monitor the use and care of cleaning supplies, chemicals, and equipment.

Team Leadership

• Assign tasks and schedules to stewarding staff to ensure smooth operations.
• Provide coaching and guidance to team members to uphold standards.
• Promote teamwork, discipline, and a positive work environment.

Compliance & Safety

• Ensure adherence to HACCP, food safety, and hotel hygiene standards.
• Report and address any maintenance or safety issues promptly.
• Support sustainability initiatives in waste reduction and resource management.

Collaboration

• Work closely with the culinary and food & beverage teams to support operational needs.
• Coordinate with supervisors and managers to ensure seamless service delivery.

Qualifications & Experience

• Minimum of 2–3 years’ experience in stewarding or kitchen operations, with at least 1 year in a supervisory role.
• Strong knowledge of hygiene, sanitation, and food safety standards.
• Experience in luxury hotels or resorts preferred; pre-opening experience is an advantage.
• Effective leadership, organizational, and communication skills.
• Ability to work in a fast-paced environment and adapt to pre-opening requirements.
