About the job

Based at the Mandarin Oriental, Hong Kong within Mandarin Grill Kitchen Department in Hong Kong, the Chef de Cuisine is responsible for the day to day running of the kitchen and overall quality of products produced.  The Chef de Cuisine reports to the Executive Chef.

As Chef de Cuisine, you will be responsible for the following duties:

• Design and implement menus that fit the requirements of Mandarin Grill Kitchen as set out by the Executive Chef
• Co-ordinate with other areas with regards to menu implementation
• Provide recipes and costing according to the ordering system, training and experience to all staff so as to improve on all things where possible
• Relay any information from the kitchen or to the kitchen that is relevant to the daily operation of the department through daily briefings or staff meetings
• To be aware of and adhere to company policies and statutory requirements with regards to health and safety, sanitation, fire procedures and HACCP
• Ensure that the staff maintain a high standard of cleanliness and sanitation in and around all culinary work areas and ensure that all colleagues clean their stations after every service
• Set and maintain a very high food standard for all colleagues to aspire to and learn from
• Provide necessary training to staff for relevant jobs and cooking procedures.

As Chef de Cuisine, we expect from you:

• Minimum 8 years of Fine Dining restaurant experience in Michelin Starred. Experience in international 5-star luxury hotels is considered an advantage.
• Creative and hands on
• Well organized and structured
• Strong leadership, communication and interpersonal skills, open mind of different culture, friendly, approachable and sociable
• Motivational with enthusiastic character with excellent listening skills
• Acquire good training and coaching skills
• Good command in English, knowledge in other languages is an advantage.
