Assistant Chief Steward is responsible for the day to day running of the pot wash and dishwasher areas for the kitchen and for following the recycling policy within the hotel and cleanliness of back of house areas. The Assistant Chief Steward must have an extensive knowledge of food hygiene regulation and take a key responsibility of this program in the hotel.

Duties & Responsibilities:

  • Maintain the purchasing and repair of all equipment.
  • Be aware of the chemical expenditure.
  • Ensure that all designated action points from daily briefings or other operational meetings are being followed by the individuals concerned.
  • Carry out other duties as and when requested by management.
  • Take responsibility of all operating equipment within the hotel
  • Inspect S&S files monthly to ensure proper procedures and updates are in place.
  • Maintain storage of operating equipment and the cleanliness and tidiness of the stores
  • Maintain the perfect condition of all operating equipment.
  • Maintain strategy for breakages and losses to the hotel’s operating equipment.
  • Implementation of HACCP with certification, follow up training for the F&B team.
  • Oversee special projects and assignments as assigned by the Executive Chef and/or the Director of Food & Beverages
  • Oversee chemical expenditure and control of chemical purchasing.
  • Perform any other reasonable duties as required by the department head from time to time.
  • Attend all training sessions arranged by MO.

Qualifications / Experience:

  • EU passport Holder is mandatory in order to work in Greece
  • Have a minimum of 1-2 years’ experience in Back-of-House.
  • Technical knowledge and job skills training including effective use of the provided materials.
