Strategic Intent
It is the mission and intent of this position that the incumbent is to assist the Director of Food and Beverage in managing all aspects of the Food and Beverage Division.
Scope of Position
The Assistant Director of Food & Beverage is responsible in assisting the Director of Food and Beverage Manager for all day to day operational activities within the Food and Beverage Division. He or she provides functional assistance and direction to the Food & Beverage operation.
Organizational Structure
The incumbent reports to the Director of Food and Beverage and assists in the management of all Restaurant Managers, Back of House Manager, Bar Manager, Banqueting Operations Manager and culinary teams. The role also requires a close working relationship with key external stakeholders.
Duties and Responsibilities
Major responsibilities
- To assist the Director of Food and Beverage in the day to day running of the division, and will act as deputy in the absence of the Director of Food and Beverage.
- To ensure the profitability, efficiency and creativity in each Food and Beverage outlet including banquet functions, outside catering events and in-room dining.
- Partner with Sales & Marketing to increase exposure and coverage of the Food & Beverage outlets in various local and international media.
- To analyze and control food and beverage costs in order to achieve financial targets.
- To approve menus, prices and promotional events for all food & beverage outlets in order to maximize revenue generating opportunities.
- To identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest comment cards and guest incident reports, and formulate action plans.
- To encourage proactive, efficient and effective inter-departmental communication in order to promote a climate of teamwork and enthusiasm.
- To conduct and assist colleagues counseling and disciplinary procedures in accordance with Mandarin Oriental, Barcelona procedures.
- To ensure that Mandarin Oriental, Barcelona grooming and appearance standards are implemented and maintained to reflect an image of professionalism and care.
- To stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation.
- To carry out annual appraisals on all colleagues using the Mandarin Oriental Hotel Group Performance and Development System PROFILE.
- To ensure that the health and safety company standards are maintained and carried out. They must be monitored regularly to ensure maximum compliance on the MOHG health and safety audit.
- To develop and implement and maintain the Standard Operating Procedures for the Division.
- To ensure customer satisfaction from arrival to departure in accordance to standards and procedures manual and the Legendary Quality Experience (LQE).
- To maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Group’s and international luxury hotel standards.
- To meet and greet all VIPs and influential clients and ensure there is follow-up on all discussed details.
- To liaise with the Learning and Development Manager on departmental learning and development needs.
- To perform any other reasonable duties as required by the Resident Manager and General Manager from time to time.
Financial responsibilities
- To manage budget of the entire Food & Beverage Division, monitor and control the expenses and ensure that there is no substantial overrun of costs
- Accurately forecast financial performances
- To review constantly and control operational cost without reducing quality and guest experience.
- To work closely with Finance in reviewing financial performance regularly
Human Resources responsibilities
- To provide support to Human Resources in recruiting, training and developing colleagues.
- To build effective teams, and provide comprehensive development and succession plans for the division.
- To introduce effective training program across the division.
