About the job

Based at Mandarin Oriental, Barcelona and reporting to the Director of Food & Beverage, the Assistant Director of Food & Beverage supports the daily operations of the entire division and acts as deputy in the Director’s absence.
This role ensures profitability, creativity and operational excellence across all F&B outlets—including restaurants, bars, banqueting, in-room dining and outside catering—while fostering teamwork, delivering exceptional guest experiences and supporting financial and strategic initiatives.

As Assistant Director of Food & Beverage, you will be responsible for:

Operational Excellence

  • Supporting the Director of Food & Beverage in the day-to-day running of the division and acting as deputy when required.

  • Ensuring profitability, efficiency and creativity across all F&B outlets, including banquets, events and in-room dining.

  • Reviewing guest comments, service audits and incident reports to identify improvement opportunities and implement action plans.

  • Staying updated on market trends in cuisine, beverage and service to encourage innovation.

  • Ensuring grooming, appearance and service standards reflect Mandarin Oriental’s professionalism and culture.

  • Maintaining SOPs for the F&B Division and ensuring consistent implementation.

  • Guaranteeing full compliance with health, safety and hygiene standards, including MOHG audits.

  • Ensuring seamless and proactive communication between departments to promote teamwork and engagement.

Guest Experience

  • Ensuring customer satisfaction from arrival to departure in line with LQE and internal service standards.

  • Meeting and greeting VIPs and key clients, ensuring follow-up on all relevant details.

  • Partnering with Sales & Marketing to increase local and international exposure of F&B outlets.

  • Approving menus, pricing and promotional initiatives to maximise revenue opportunities.

Financial Responsibilities

  • Managing the F&B Division budget, monitoring expenses and preventing cost overruns.

  • Analysing and controlling food and beverage costs to achieve financial targets.

  • Accurately forecasting financial performance and contributing to financial reviews.

  • Working closely with Finance to ensure consistent tracking and optimisation of results.

  • Controlling operational costs without compromising guest experience or service quality.

People Leadership & Development

  • Maintaining a well-trained, motivated and engaged team aligned with luxury service standards.

  • Conducting annual performance reviews using MOHG’s Performance & Development System PROFILE.

  • Supporting counselling, coaching and disciplinary procedures in accordance with hotel policies.

  • Collaborating with the Learning & Development Manager on departmental training needs.

  • Supporting HR in recruitment, development, onboarding and succession planning.

  • Encouraging a culture of continuous learning, professionalism and enthusiasm.

Additional Responsibilities

  • Ensuring effective follow-up on all actions discussed with leadership, VIP guests and key stakeholders.

  • Performing any other reasonable duties as required by the Resident Manager or General Manager.

As Assistant Director of Food & Beverage, we expect from you:

  • Strong leadership, communication and problem-solving abilities.

  • Proven experience in luxury hospitality, ideally in high-volume and diverse F&B environments.

  • Financial acumen and understanding of F&B cost structures.

  • Ability to work under pressure while maintaining calm, clarity and professionalism.

  • Creativity, adaptability and a proactive mindset focused on continuous improvement.

  • A team-oriented approach, with the ability to motivate and develop multicultural teams.

  • Fluency in English and Spanish; additional languages are a plus.
