Assistant Manager All Day Dining Cinnamon

About the job

Based Mandarin Oriental Jakarta, the assistant manager is responsible for ensuring the smooth day-to-day operations of the restaurant. The assistant manager reports to the Restaurant Manager.

As assistant manager, you will be responsible for the following duties:

1. Operational Management

  • Assist Restaurant Manager to lead day-to-day operations of the all-day dining outlet, ensuring all shifts run efficiently.
  • Maintain proper setup and readiness of the dining area, buffet, and service stations before each meal period.
  • Ensure service standards, SOPs, and hygiene protocols are followed consistently.

2. Guest Service Excellence

  • Monitor guest satisfaction on the floor; engage with guests, handle complaints, and resolve issues in real time.
  • Assist Restaurant Manager to ensure smooth coordination for large bookings, VIPs, and guests with dietary requirements or special requests.
  • Collect guest feedback and implement service improvements accordingly.

3. Team Management & Development

  • Assist Restaurant manager to conduct training for all restaurant service leaders & staffs.
  • Conduct daily pre-service briefings and regular team meetings.
  • Support staff performance through coaching, mentoring, and evaluations.
  • Foster a positive, service-oriented work culture.

4. Revenue & Cost Management

  • Monitor sales performance, upselling success, and guest average check.
  • Assist Retaurant Maneger to control labor costs, manage scheduling, and ensure efficient use of manpower.
  • Assist in budgeting, forecasting, and financial analysis.

5. Inventory & Equipment Oversight

  • Ensure proper inventory levels for operational supplies (cutlery, linens, condiments, etc.).
  • Monitor usage and prevent wastage or breakage.
  • Coordinate with storekeeping and stewarding departments for stock movement and cleanliness.

6. Cross-Departmental Coordination

  • Work closely with the culinary team for menu implementation, buffet replenishment, and quality control.
  • Collaborate with Events, Housekeeping, and Front Office for group bookings or themed events.

7. Reporting & Administration

  • Maintain SOPs, training checklists, and guest comment logs.
  • Support audits and health inspections as required.

As assistant manager, we expect from you:

Educational Background 

  • A bachelor’s degree in hospitality management or a related field is often preferred

Experience 

  • Minimum 5 years' relevant experience in Restaurant Management in an international luxury hotel group of which at least 2-3 years’ experience at a senior management level, preferably within the hospitality industry.

Skills & Competencies 

  • Ensure the day-to-day operations of the restaurant are executed seamlessly and always run efficiently.
  • Possess strong operational experience across breakfast, lunch, and dinner services, with in-depth knowledge of sequence of service and guest flow management.
  • Demonstrate excellent leadership, strategic planning, and proactive communication to guide and support the team effectively.
  • Foster a culture of excellence, professionalism, and continuous improvement, aligning with the values of the organization.
  • Exhibit strong administrative and planning skills, ensuring smooth coordination of all operational activities.
  • Create and manage staff schedules to maintain optimal coverage, particularly during peak periods and events, while maximizing labour efficiency and profitability.
  • Be customer-oriented, flexible, and creative, anticipating guest needs and exceeding expectations through proactive, detail-oriented service.
  • Communicate the vision, mission, and goals of the division clearly and effectively to the team.
  • Manage and maintain inventories of chinaware, glassware, silverware, and other operational equipment, ensuring proper upkeep and availability.
  • Be results-driven, with sound business acumen and an understanding of key performance indicators.
  • Ensure all team members adhere to grooming and uniform standards as per brand guidelines.
  • Conduct regular performance reviews, providing constructive feedback and guidance to support team development and enhance service delivery.
  • Serve as the primary point of contact for guests during daily operations, proactively addressing needs, resolving issues, and ensuring a high level of guest satisfaction.

Technical Proficiency 

  • Computer literacy in Microsoft Office applications.
  • Familiarity with Infrazys, Sevenrooms, HMS or similar platforms is an advantage.
