About the job

Based at the Mandarin Oriental Al Faisaliah Riyadh within the Culinary Department in Riyadh, the Chef de Cuisine is responsible for all related operational, administrative and financial aspects for the culinary operation He /She will furthermore oversee the culinary operation, including The Globe, Asir Lounge, Room Service & Lobby Lounges.

As Chef de Cuisine, you will be responsible for the following duties:

It is part of your role to understand and disseminate/communicate all corporate and hotel policies and standard operating procedures to the colleagues.

  • Hold monthly meetings with all colleagues to assure they have a forum to voice any concerns or challenges and share departmental and hotel information.
  • You shall take all reasonable steps to safeguard stored information, and not divulge or otherwise transfer any personal data concerning the guests, customers or colleagues, or any confidential information concerning the hotel unless with the appropriate authority.
  • Support and adhere to all policies & procedures relating to Safe, Sound and Sustainable at Mandarin Oriental.
  • Ensure compliance with the MOHG Social Media Policy, i.e. to be fully responsible for the content you publish on any social media platform, including your personal site.

As Chef de Cuisine, we expect from you: 

  • Oversee all operational and administrative culinary aspects of La Brasserie, Terrace Lounge & Main Kitchen as appropriate and be able to prioritise the required level of engagement in all areas depending on business volumes and other related parameters.
  • Create and maintain a great synergy between La Brasserie, Terrace Lounge & Main Kitchen, and all other related kitchens to assure maximum efficiency.
  • Responsible for the ordering and requesting of fruits and vegetables in a daily basis.
  • Ensure all fruits and vegetables received are washed, clean and sanitized and stored in the corresponding storage.
