About the job
Based at the San Clemente Palace within the Culinary Department in Venice, the Chef de Partie is responsible for running a specific section of the kitchen independently, ensuring the preparation and presentation of high-quality dishes in accordance with the resort's culinary standards. The Chef de Partie reports to the Sous Chef.
As Chef de Partie, you will responsible for the following duties:
Oversee the day-to-day operations of an assigned kitchen section (e.g. grill, pastry, fish, sauces)
Prepare and present dishes consistently and in line with established recipes and plating standards
Ensure all mise en place is ready ahead of service and kept to high hygiene standards
Supervise and support Commis Chefs and Demi Chefs de Partie in their tasks
Monitor food stock levels, report shortages, and assist in inventory control
Maintain cleanliness, organization, and compliance with HACCP and food safety regulations
Communicate effectively with other sections and the front of house when required
Contribute to menu development and continuous improvement of dishes
As Chef de Partie we expect from you:
Proven experience in a similar role within upscale or luxury hospitality kitchens
Expertise in one or more kitchen sections and strong all-round culinary skills
High standards of cleanliness, organization, and attention to detail
Ability to work efficiently under pressure and deliver consistent quality
Team-oriented mindset and the ability to supervise junior team members
Flexibility to work rotating shifts, including weekends and holidays
Culinary diploma or equivalent professional training
