About the job

  • Based at The Landmark Mandarin Oriental, Hong Kong within Kitchen - SOMM & IRD Department in Hong Kong, the Chef de Partie is responsible for assisting the Sous Chef & Junior Sous Chef in day to day running of the department and production of all food items according to the highest standards. The Chef de Partie reports to the Sous Chef & Junior Sous Chef.

As Chef de Partie, you will be responsible for the following duties:

  • Responsible for mise-en-place preparation and sample tasting for management in assigned section
  • Lead Commis Chefs and other kitchen staff to ensure all food items are produced in a professional manner and up to standards
  • Ensure preparation and cooking standards are maintained
  • Maintain proper stock level for mise-en-place and assist in food requisition as required
  • Ensure high standards of cleanliness maintained and to meet HACCP requirements
  • Report any problems, failures of machines or equipment
  • Perform duties set aside by the Chef de Cuisine or Executive Sous Chef.

As Chef de Partie, we expect from you: 

  • Solid experience in hotels or reputable restaurants
  • Pleasant, self-motivated, detail-orientated and able to work independently
  • Strong organising, communication and interpersonal skills. Exemplary leadership skill will be an advantage
  • Excellent food & beverage and menu planning knowledge
  • Good command of both spoken and written English.
